When you start your day with a healthy breakfast, you also start with a smile for your tummy! I haven't always been the biggest breakfast person - I know, I know, but RDs aren't perfect! I just don't have the biggest appetite when I wake up, so it always takes me a little while to get hungry and want food. Since I know it's important to put nourishing food in my tummy early, I always try to have a little something, and I focus on getting in healthy stuff like fresh fruit (or veg!), whole grains and high quality protein. I know my meal may not always be a big, full, totally balanced breakfast, but by making as many good choices as I can, I get myself on the right track early. On an unrelated note, I like to play with my food and I hope you enjoy my artwork 😁😁

Total pregnancy craving lunch...no greens in sight but still rocking 9g of fiber (banana + while wheat bread) + 13g protein (#betternpeanutbutter!) for 350 calories. Covered all the cravings: sweet, salty, crunchy, mushy...oh, and so easy to throw together. There WILL be salad + veggies with my dinner but right now my baby bump + I are in an amazing PB + 🍌 coma!

We eat these 3 grains a lot in our house. One of my very favorites is farro. It has this awesome texture β€” it almost squeaks a little when you bite it β€” maybe it makes me weird, but I like it!
This weekend I had a delicious risotto made from it. Seriously... whole grain risotto that didn't suck! It was GOOD.

More meal prep! If you're going to make some rice, cook the whole pkg and freeze the rest! I did this today using sprouted brown rice. Sprouting rice makes the nutrients more bio-available so they can be better absorbed by the body.
