We’re officially married and made it to Cabo for a little mini-moon. THANKSGIVING 🦃 | Only 4 days until Thanksgiving! Are you ready? I am far from ready & am feeling less prepared/more behind than usual this year 😬, but I'm *really* trying to make some progress today by getting organized: writing lists, gathering recipes, & finalizing the menu, all while hoping that this next snow storm misses us & doesn’t mess up my final pre-Thanksgiving grocery run this week (& the Thanksgiving celebration at my son’s school).😬🤞🏻
🦃 Here’s my annual Thanksgiving PSA (I’ve said it before, & I’ll say it again 😉): If you need a wholesome, crowd-pleasing, & (most importantly!) extra-delicious veggie side dish for your Thanksgiving table, may I suggest this one: A big bowl of roasted fall vegetables—butternut squash, carrots, cauliflower, & brussels sprouts. I’ve been making it every Thanksgiving for many years now, & it couldn’t be easier: Just toss the veggies on a sheet pan with some olive oil & roast them in the oven until they're bronzed & caramelized & perfectly delectable! Other than the chopping of the veggies, it’s mostly a “hands off” dish—a quality that is particularly welcome on Thanksgiving Day—& everyone loves them! 😊 And this #vegan, #glutenfree dish makes enough to feed a crowd! It’s the one thing I don’t have to think too much about as I plan the Big Day! 😊

The issue is that the kale salad 🌿 at my wedding set an unrealistically high kale salad 🌿 bar that I’ll never again be able to hit. I mean I just made a kale salad for dinner and nobody stood up to talk in a mic 🎤 about Jesse’s and my great love ❤️ while I was eating it. Instead, RedZone just yelled at me about other men’s whereabouts 🏈🤦🏼‍♀️

1 1/2 cups spelt flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ground ginger
1/4 cup shredded unsweetened coconut (optional)
1/4 cup chopped pecans (optional)
1 1/2 cup shredded carrots (about 4 large carrots)
1/2 cup mashed banana (about 1 large banana)
1/4 cup unrefined coconut oil
1/2 cup pure maple syrup
2 tsp vanilla extract
1/2 cup non-dairy milk
1 cup raw cashews, soaked
juice of 1 lemon (about 1/4 cup)
2 tbsp pure maple syrup
1-3 tablespoons non-dairy milk
1 tsp vanilla extract
pinch of salt
1/2 tsp cinnamon (optional)
Preheat the oven to 350°F then lightly grease a loaf pan.
In a large bowl, combine the spelt flour, baking powder, baking soda, salt, cinnamon, ginger, coconut, and chopped nuts. Sift together. Add the shredded carrots to the bowl (without stirring) then set aside.
In the bowl of a blender, combine the banana, pure maple syrup, vanilla extract and milk. Blend on high until smooth. Alternatively, you can mash the banana by hand and combine the ingredients in a bowl. Try to get it as smooth as possible if not using a blender.
Pour the wet ingredients into the bowl with the dry. Add the melted coconut oil last then stir everything together just until combined. Transfer the batter to the loaf pan and bake in the preheated oven for 45-50 minutes.
Meanwhile make the icing by combining all of the ingredients (starting with just 1 tablespoon milk) in a high speed blender and blend until smooth. Scrape down the sides in between blending. Add more milk, as needed, to thin and more salt or sweetener as desired.
Allow the loaf to cool for 30 minutes to an hour. Once cool, spoon the frosting on top. Sprinkle with chopped nuts and coconut, and enjoy!

Cinnamon banana pancakes
200g spelt flour
1.5 tbsp baking powder
Pinch of salt
2 tsp cinnamon
1 tbsp agave syrup
1/2 cup almond mylk
1 cup sparkling water
2 mashed ripe bananas
Heat up a frying pan to a medium heat with a little oil. In a bowl, mix all dry ingredients together well. Make a well in the middle and add all wet ingredients, stirring to form a thick but smooth batter. Spoon about 2 tbsp of batter per pancake into the pan and flip once bubbles appear. Top with your fave spread and fruits!
