Sweet Potato Chili 🍠

4 cups peeled/cubed sweet potato
1 can of black beans @edenfoods
1 can of corn
1 1/2 cups chicken broth @kettleandfire
1 28 oz can diced tomatoes
1 6 oz can tomato paste
1 large white onion diced
1 chili packet @oldelpaso
2 lbs ground beef
1/2 tsp paprika @simplyorganicfoods
1/2 tsp onion salt
1/2 tsp garlic powder
1/2 tsp chili flakes.

Place the first 8 ingredients (up to chili packet) into a crock pot and mix. Then cook the ground beef on the stove top with the remaining spices. Combine with the crockpot mixture and place on high heat for 4 hours or until sweet potato is cooked through. Enjoy with cilantro on top and a nice slice of @stonemillbakehouse toast! .

Easiest fall recipe for a cold week, plus it comes with plenty of left overs! (We got 10 servings out of it).

Hey guys, do you want some toasts? 😃 Made these for dinner (shared them with my bf) and tried out a new recipe for a healthy chocolate spread which you will find below. I used the Stevia drops from @foodspring as a sweetener. 💚

RECIPE:

1/4 cup nut/seed butter (I prefer hazelnut butter, peanut butter or sunflower seed butter)
3/4-1 tbsp cocoa powder (or to taste)
4 drops Stevia drops from @foodspring (or more to taste)
.
Just add all ingredients to a bowl and stir with a whisk.

This spicy crockpot pumpkin soup is up on the blog and ready for you to make this fall!! It's been chilly (for Austin) and rainy here and soup is the perfect remedy. All you need to do is dump everything in crockpot, soak some cashews (for the best creamy consistency!), and blend it up! The hardest part of this recipe is cutting up the pumpkin...it's a serious arm workout. Makes a great dish for an easy week meal and great for meal prep! Link is in my profile!⠀

Sweet potato wedges with cilantro lime sauce 😍 The key to these is to get the oven really hot (450-475 degrees F) so they brown instead of steam. Love them dipped in salted plain Greek yogurt or labne. For a sweeter version, add a drizzle of maple syrup and pinch of cinnamon in the yogurt before dipping. Yum! *

APPLES 🍎🍏 | We’re slowly working our way through all the local apples we picked this month, & these Apple Crisp Yogurt Parfaits have been one of our favorite ways to enjoy them. My boys have been eating them for breakfast most mornings, & I’ve been enjoying them as a quick afternoon snack. With the cinnamon apples, @stonyfield Greek yogurt, & our favorite Maple Walnut Granola, they taste like an indulgent dessert but they’re really a healthful, protein-packed breakfast or snack. And although I layered the ingredients here to make the parfaits look pretty, I’ll be honest: Most times I just quickly throw the ingredients in a bowl—it still tastes the same. 😉

One of my favorite things to do on a chilly day is pop any kind of stone fruit in the oven. It’s the easiest way to create something similar to a cobbler. I had cherries on hand, so I whipped up some Roasted Cherries Topped with Toasted Almonds, Dark Chocolate Shavings and Sea Salt. It’s like one big hug on the inside. 😊 Recipe: Preheat the oven to 400 degrees. Remove the cherry pits and place in a baking dish. Roast for 15-20 minutes. Meanwhile, sliver the almonds and dark chocolate. Toast the almonds on medium heat in a pan for just 2 minutes or until golden brown. Once the cherries have caramelized, plate them and sprinkle the toasted almonds, dark chocolate and sea salt on top. •

4🌱Are you incorporating fermented foods such as kimchi (fermented cabbage), sauerkraut (fermented cabbage), tempeh (fermented soybeans), kefir (fermented milk), + kombucha (fermented tea/alcohol) into your diet?

5🌱Supplements to consider if 1-4 aren’t cutting it for your digestive system: magnesium, prioritizing unsaturated fats for saturated fats, glutamine.
