Alfredo fettuccine al pomodoro, so I won’t provide the recipe just yet, because I will give you something better with not just this recipe but others as well. This recipe was actually inspired by my childhood, I’m not Italian, but my family made Italian food A LOT. This fettuccine has a creamy tomato sauce hence why it’s called pomodoro, topped with roasted balsamic cherry tomatoes, roasted mushrooms, and parsley. (vegan, gluten free, naturally sweetened)

5 tbsp ground flaxseed
½ cup water
1 ½ cup Risenta almond meal
1 cup Risenta rice flour
⅓ cup coconut sugar
2 tsp baking powder
1 tsp ceylon cinnamon
2 tsp gingerbread spice mix
½ tsp cardamom
tiny pinch of sea salt

1 can (400 ml) full fat coconut milk
½ cup coconut oil, melted
5 fresh dates, pitted
5 tbsp coconut syrup
1 tsp vanilla extract

5 fresh dates, pitted and cut to small pieces

3 tbsp coconut oil, melted
3 tbsp smooth peanut butter or white tahini
1 tbsp coconut syrup
1 tsp vanilla extract

On top:
Coconut flakes

Cake mold: 1,5 - 1,8 liters

Preheat the oven to 175 Celsius / 350 Fahrenheit degrees. Grease the bundt cake mold with coconut oil. Mix the ground flax and water in a small bowl and leave to thicken. In the meantime prepare the cake dough.

Mix the dry ingredients in a big bowl. Place coconut milk, coconut oil, 5 dates, coconut syrup and vanilla into a blender and blend until smooth. Mix with dry ingredients. Add the flax mixture and mix well. Stir in the date chuncks. Pour the dough into the cake mold. Bake for 55-60 minutes. The cake is ready when toothpick comes out clean. Take out of the oven, let cool for about 10 mins and remove from the mold. Let the cake cool down totally. Frost and serve! The cake is best after one night in the fridge.

Mix the coconut oil, nut butter and vanilla in a small bowl. If the mixture goes too runny, keep it in the fridge for 15 minutes mixing couple of times. Frost the cake and decorate with coconut flakes & nuts.

Crockpot sweet potato, chick pea, lentil, and kale soup. I will always love a meal that cooks itself because that means more time for baby and me! We will definitely be stirring up a pot of this soup again.
To make:
2 Sweet Potato
1 Russet Potato
2 Carrots
2 Stalks of Celery
1 Medium Onion
Mix in the crockpot with:
2 cups of Green Lentils
8 cups of Chicken or Vegetable Broth
1 can of Chickpeas
2 tsp of Herbes de Provinces
and Salt and Pepper to Taste
Allow to cook on low for 6-8 hours. 30 minutes before serving squeeze the juice from a lemon and stir in chopped kale.
Yum. Who else is going to give this one a try?

Today’s real food dinner inspiration! My Italian meatballs (lamb today), and a home made coleslaw. Actually the coleslaw I bought already done (love I can pick up organic already done salads), and I just made my own mayonnaise - one egg, 1 cup olive oil & some salt. For the exact recipe, go to @ditchthecarbs. It’s so easy!
Here’s the recipe for my meatballs. They’re great with any meat, and I haven’t met anyone who doesn’t like them (and I’ve made them a lot!).
500g mince (I use a combination of pork/beef)
1 egg
1 tablespoon double cream (unsweetened)
2 tablespoons tamari sauce
1 tablespoon psyllium husks
Chopped fresh parsley
1/4 cup grated parmasan
1 tablespoon tomato paste
1 cup sugar free pasta sauce or Pasatta
Salt, pepper to taste
Butter for frying.
Put all ingredients (except pasta sauce) in a large bowl, and mix really well (you may have to use your hands). Roll into desired size balls, and if you have time, place in the fridge for an hour or so (helps to keep their shape when cooking). Fry some butter on a frypan on med/high heat, and sear the meatballs, about 3 mins each side. Place balls into an oven dish, cover with the pasta sauce (it won’t cover it all but that’s ok), and place in a low oven (100 degrees Celsius) for a couple of hours (or cook at 180 degrees for 20 mins or so if you don’t have much time). Serve as you desire! These are a perfect dinner on top of zucchini spirals, or put on a platter with a toothpick as finger food. Note: these are so yummy just done in the pan if you can’t be bothered to put in the oven. .

On the eve of my birthday, I sit back and reflect on the year I’ve had. Getting over that hump of the number 30 was hard and it was my first birthday without my mom. My friends threw me a fabulous birthday party because they knew I would probably have locked myself in my house haha .
There have been ups and downs this year and some serious health scares but that is apart of life and growing up. I am incredibly thankful for the people that have stayed with me through these last few very hard months. Your unconditional love and support has meant the world to me. Tomorrow on my 31st birthday, I hope to wake with a sense of peace, to feel like myself again, or a semi normal version, to be happy, and spread love. .
But if you don’t see me, I probably locked myself in my house ;)

It may take more hours in the beginning but you definitely get the hang of things by the 3rd week in the kitchen. If you are counting your macros , make your list for the week before going to the grocery store. If you are a beginner , use the app " my fitness pal" to keep you on track until you get use to the items and can put it together yourself. I try to get rid of my prep by doing my meals for lunch and dinner for the week. I am not a picky eater so i do not mind eating the same thing all week. If you like variety, then you can choose two days out of the week that works for you and switch up the meals. Everyone has different goals . For me, I am eating a whole foods diet and i love using a lot of herbs and spices. Hope this gives you some motivation to start your own meal prepping. Peanut butter Oats for breakfast anyone?? 🥜💕 I found some freshly grated coconut 🥥 in the fridge section and have been amazed by how much flavour it has! I’m definitely adding it to my protein ball mixture to see how it compares to desiccated coconut.
Throw some chopped dates and a tablespoon of peanut butter into a saucepan with your milk of choice and add in the oats. Top with fruit, coconut and Chia seeds. Voila!!! 🙌
