With work being so busy and getting home late for the last few months, it's been really hard to cook regular, healthy meals.
It becomes a bit of a vicious cycle when you are busy and stressed, yet unable to feed your body with the proper nutrients it needs - you end up becoming even more tired and stressed.

This week I had a conversation with work to change things up a bit, providing me with more time to look after myself. It was a long overdue conversation, but I'm so glad I had it.

So glad I was able to come home today between shifts and prepare a healthy dinner for tonight.
Never be afraid to make decisions that work better for you, even if it means taking a step 'back' or a step 'down'.

I have a feeling we’ll fall for noodle bowls this season. 🍁 Warm, satisfying and easy 👌🏼A mix of soba noodles and zoodles are a great base to stir-fried carrots, bok choy, snap pease, bean sprouts and steak. Meal prep : Taco Tuesday! I made a turkey taco with brown cilantro lime rice and homemade salsa! Delish 🤭 and from now I’m swapping sour cream to Greek yogurt. Didn’t expect much from it, but I think it actually taste better and more rich yay!!!

Breaking up with coffee was the saddest of all food break ups for me. 😭 Grains, dairy, soy, all processed foods, most sugar...BUT COFFEE? I knew for at least two years that it wasn’t doing me any good before finally listening, buuuut I quit it only after it popped up red on food sensitivity testing (I did MRT). I have struggled with severe adrenal fatigue and low cortisol for a long time now, and was relying on my morning cold brew as a motivation to even push myself out of bed in the morning. 😴 I was chemically dependent, but didn’t accept that fact until I stopped drinking it.
The first thing I noticed when I quit coffee is my chronic shoulder and right arm nerve pain I’ve had for years was at a daily pain level of 6-7 rather than a 10. I don’t know if that will be true for you, but my pain is highly impacted by stimulants, so. 💥 Soon after, my sleep quality improved, my digestion, and my overall mood and stress. 💆🏻‍♀️ Seriously, it was a game changer for me!
The thing is, you NEVER know unless you cut it out ✂️ reintroduce after at least 30-60 days, and take note of your body and mind’s response.
After giving it a few months off, I am now bringing in some decaf beans (important that the beans are decaffeinated by Swiss water method OR carbon dioxide method - NOT solvent-based processes like methylene chloride or ethyl acetate). Let me just say, no matcha or anything else can quite replace the taste of cold brew. ☕️ The difference now is, I’m enjoying it for the ritual and taste rather than a chemical dependency. 💃🏻
Moral of the story - it’s crucial to that we periodically take steps back and assess our choices and how those foods or habits are making us feel. It’s too hard to tell if something is making you sicker if you never test your theory. Also, coffee and other caffeine/sugar/substances 🍭 are not just foods - addiction of any type effects us from a psychological and mental perspective as well!

Wheat Penne alla Vodka Bake
^ • 2 tbsp olive oil • 2 small shallots, diced • 3 cloves garlic minced • 2 chicken breasts, diced • 26 ounces strained tomatoes. • 2 tbsp tomato paste • 1/2 cup vodka (yes real vodka, the alcohol cooks out) • 2/3 cup heavy whipping cream • 1 cup freshly grated Parmesan cheese • 1 tsp salt • 1/2 tsp pepper • 1 tsp red chili flakes • 20 ounces rigatoni pasta • 1 red pepper, diced • 2 cups spinach, chopped • 2 cups chicken broth • 2 cups freshly shredded mozzarella cheese • 1/4 cup finely chopped fresh basil
1 Heat olive oil in large pot over med-high heat. Add shallots and garlic, sauteeing for 30 seconds. Add chicken and cook for 3-4 min until lightly browned. Add passata, tomato paste and vodka. Bring to a boil and simmer, covered, for 10 minutes. Meanwhile, preheat oven to 375 F. ^
2 Add whipping cream, parmesan cheese, salt, pepper and red chili flakes, stirring well to combine. Cook for another 2-3 min then emove from heat. Add dried pasta, chicken broth, red pepper and spinach, tossing well to coat. ^
3 Grease a large oven safe dish (I used a 9x13 baking dish) and then add pasta mixture, pushing pasta down into liquid as much as possible. ^
4 Cook in the oven, covered in tin foil, for 40 minutes, stirring halfway through cooking time. Remove from oven and top with mozzarella cheese, then cook for another 10 minutes or until cheese is melted. ^
5 Garnish with fresh basil and serve!
