Just made the most amazing “Chile lime shrimp bowl” adapted from @budgetbytes blog!! This was supposed to be enough for 3 servings but I ate it all 😂 * 1/2 lb peeled shrimp * tsp chili powder * 1 Tbsp avocado oil (recipe called for vegetable oil but avocado is just as mild and much much healthier)
* 1 tsp honey $0.05
* 1 tsp soy sauce * 2 cloves garlic minced * 1 medium lime
* 1-7.5 oz cans black beans
* 1 tsp cumin * 10 oz can crushed pineapple * 1/4 small red onion * 1/4 tsp salt * Handful cilantro * 1 cups long grain rice
1. Marinate the shrimp in with the lime juice, minced garlic, avocado oil, honey, soy sauce, and chili powder while you prepare everything else
2. Cook the rice according to instructions
3. Sauté the black beans with minced garlic, some avocado oil, and cumin
4. Combine the crushed pineapple, diced red onion, and chopped cilantro for a pineapple salsa (this is what made the recipe so yummy I think)
5. Cook shrimp over medium heat with the marinade
6. Throw it all in a bowl.. so yummy!!!!

⚖️ Sometimes we can make really simple dietary substitutions that have big impacts on our health. 💪🏼

1️⃣ For example: We can substitute egg whites which are basically just protein for whole eggs 🍳 which help us attain our daily value for choline, vitamin B12, selenium, and contain lutein and zeaxanthin, two carotenoids found to help boost brain processing speed by up to 20% (I give you many other tips for boosting brain processing speed in my book Genius Foods).

2️⃣ Or swapping out roasted nuts, which usually are actually fried in unhealthy oils made doubly unhealthy by the heating process (unless they are specifically labeled 'dry roasted').

3️⃣ Or ditching canola oil, which is toxic (and specifically shown recently to impair cognitive function in a mouse model of Alzheimer's disease) in favor of extra-virgin olive oil, which is full of powerful phytochemicals like oleocanthal which has strong anti-inflammatory potential—good for every organ in your body!

4️⃣ And finally, white onions for red onions. White onions are GREAT, but red onions are better, shown to possess significantly stronger anti-proliferative and anti-migratory behavior due to the anthocyanins they contain. I'm all about more nutritional bang for the buck!

Made Buffalo cauliflower wings tonight for the first time!! Oh my gosh. Life-changing. I never really ate buffalo wings before going vegan, but I figured I’d give it a shot. Paired with a cashew “ranch” sauce... I’m currently in finals mode and was glad this didn’t take too long! I’ll have leftovers for a couple days so saved me time in the long run. Salmon is now on the weekly meal rotation at my house but it wasn’t always that way. Until my son was born, I had a 3-decade aversion to fish. To me it didn’t look appealing and there was always something I would rather have - the things I was accustomed to eating like hamburgers and pasta. To make matters worse, I didn’t know how to cook and wasn’t about to try a hand at something so foreign and so difficult to get right. When I really started to learn about nutrition, though, it became hard to ignore the benefits of fish. By the time my son arrived, I couldn’t let my food stories and fear get in the way of his health. It was just too important. And you know what? I figured it out. There were some over-cooked and bland fillets along the way but forging ahead I have discovered how easy and delicious it can be. My rule is to keep it simple: drizzle of olive oil, squeeze of fresh lemon, salt and pepper. Sometimes some fresh dill or Penzy’s Greek herb blend or Old Bay seasoning. Pop in the oven at 350F for about 20min or until flaky. Both of my kids now ask for salmon regularly and say “yay! salmon!” when it’s served. Just one of the invaluable lessons I’ve learned as a mom.
