This little salad is just a spring mix mixed with a little lemon garlic dressing by @tessemaes. Add a little chicken sausage and a runny egg (extra salad dressing 😉) and you’ve got the perfect meal!

Day 26, Meal 1. I was feeling uninspired by food this morning and after a long thought decided to make "huevos ahogados" which literally translates to "drowned eggs." This is one of my go to meals when I have minimal food and time. This is so good and so easy to make. I sauteed some onion and garlic, added a can of diced tomatoes and let them simmer down for a few minutes. Then I added some cumin and oregano. Cover and let cook to your egg consistency. Usually I would eat these with tostadas or alone but today I tried it with tostones. LOVE!!

Not only is the #whole30 one of the biggest cognitive challenges I’ve experienced - but it’s also teaching me what my body likes to consume, and is screaming at me to recognize that there are some things my fragile little tummy can’t handle too. It’s really difficult, but really fun and interesting to get in tune to the functions of our own digestive systems and better understand the HUGE role it plays in our everyday lives. My sweet husband made breakfast for the family this morning. This is a potato + sausage + peppers + onion hash with guac and chipotle mayo. The boys also had scrambled eggs, but I’m not a fan. •

Sweet Potato Egg Cups 🍠
How many ways can we eat sweet potatoes?! An easy and healthy way to switch up your typical breakfast. These took a total of 20 minutes!
🍠 Pre heat oven to 400 degrees. Shred sweet potato. Pour avocado oil or coconut oil in muffin cups. Place shredded sweet potato in muffin cup and push in and around cup making a nest. Bake for 10-12 minutes.
🍠Take out of the oven and crack 2 eggs in cups. Cook for another 8-10 minutes depending on desired egg consistency.

@WHOLE30 DAY 1 🥑 thinking about all the eggs I’m going to eat... 🍳😂 last day of Florida vacay, first day of my 7th round of the Whole30 (since 2015!) 💕 I don’t usually plan a round of Whole30 that far in advance because I know I’ll fail a round that I don’t really NEED to do. 🤷🏼‍♀️ But even though I’ve been planning this one since March, all this indulgent vacation food has me SO ready for a full, 30 day reset. 🤢 the timing ended up perfectly! ⏱ my day 30 ends up being the final day of my very first @whole30recipes takeover, which means that the end of June I’ll be doing a TON of reintroduction content for you guys to help you learn the MOST you can from your Whole30! 🎉 Anybody else Whole30ing in June?! After crossfit today I was HUNGRY! So, I whipped up an egg scramble with two eggs, ground turkey, and tomatoes. I paired it with avocado and sautéed plantains... SO GOOD!!
