I'm not saying I'm back but geeeeze I'm trying. This is the longest I've run since my injury and last week I was running strides at 8:00 min pace. Today my last split was 7:15!

Last dinner of my whole30 round 1!!!! I made pork roast with kale and mashed potatoes mmmm. Perfect meal to end this amazing experience!! I'm so proud of myself for accomplishing this challenge! I have definitely leaned out, I'm sleeping so much better, my energy is a lot more stable, and my skin is so clear!! I've decided to have a little paleo treat tonight and then I'm going right into round 2 tomorrow. Healthy Chocolate Muffins | Paleo, Vegan, Gluten Free, No Refined Sugar!
#dotf so good. Recipe and macros! Β»3/4 cup almond meal (I bought mine at kroger, pricy at $10 but lasts forever)
Β»1/8 cup of toll house 100% cocoa powder
Β»1/4 tsp baking soda
Β»1/4 c unsweetened natural applesauce (I used aldi brand)
Β»pinch of salt
Β»3 eggs
Β»1 tbs olive oil (if you like the taste of coconut use coconut oil)
Β»3 tbs of honey (I sub out date paste I make from trader joes majooled dates- honey isn't vegan but neither am I)
»1/4 tsp vanilla extract »»mix, pour into 7 lined cupcake tins, bake at 350 for 20 mins!

πŸ‘©πŸ»β€πŸ³This week's grocery haul has more frozen and prepared food than I think I've ever purchased before at one time, BUT it comes as a result of learning new time management skills. I have lots of fresh veggies and meats as well as frozen, but I didn't go for any fresh fruit because I haven't wanted it. ⚑️I found some almondmilk yogurt and I'm psyched to try it. Other new things I'm going to try: Tofutti cream cheese (to be eaten with smoked salmon), chicken apple breakfast sausage, ground bison meat, gf df lasagna, eating from paper plates when I don't want to cook because I don't want to do dishes (I'm sorry), and meal prepping veggie-rich sausage and egg breakfast sandwiches so my first meal of the day will be a good one.

It's a big day for us at University of Penn today! My Mom is totally cancer free and ready for reconstruction surgery. It's been a long road. Thankfully not as long as some. Mom's diagnosis came July 29 of 2016, and her double mastectomy was August 30th. Since then she's recovered from surgery, gone through chemotherapy, recovered again, and here we are. Please send whatever juju and good vibes you have to my Mom. She's a bright spot in the universe, and a good soul. She's been so positive about everything the last year, we just have to get through this last stretch. Her trials have been a catalyst for me and my health.
