It's really simple to make - 1 part polenta to 5 parts liquid (can be a combo of water, stock or milk, or just one of them)
Cook for 40 min until the grain is cooked through, and it comes away from the pot.

GREEN LUNCH 🍃🍽
Inmiddels een maand geleden ben ik langs diëtiste @fitmetiris voor een EMB bloedtest. 💉 Ik hoopte door deze test er achter te komen waarom ik me vermoeid voelde en mijn buik altijd onrustig is. Uit de test kwam naar voren dat mijn B12 en magnesium waarden veel te laag waren en ik allergisch ben voor koemelk, tarwe, suiker en vlees (ja echt!). De komende maand slik ik een hoge dosis B12, magnesium en B6, vermijd ik tarwe en suiker zoveel mogelijk en gebruik ik dagelijks probiotica (bacteriën die de darmwerking bevorderen)
Ik voel me al een stuk energieker, heb een betere focus en ben weer gemotiveerd om gezond te eten en te sporten! 🏋🏻‍♀️🍏
Ook ben ik van plan om weer regelmatig te gaan posten op dit account en 'mijn voortgang' met jullie te delen 😄

Ingredients:
.
. - 3/4 cup melted coconut oil or vegan margarine (I love using @meltorganic)
. - 1 cup white sugar
. - 1/2 cup molasses
. - 1 tbsp ground flax seed mixed with 2 tbsp water (egg replacement)
. - 1/2 cup sorghum flour
. - 1/4 cup teff flour
. - 1/2 cup potato starch
. - 1/2 cup tapioca starch
. - 1/2 cup white rice flour
. - 1/4 cup sweet rice flour
. - 1 1/2 tsp xantham gum
. - 1 tsp baking soda
. - 1 tbsp ground ginger
. - 1 tsp cinnamon
. - 1/2 tsp ground cloves
.
.Directions:
.
.1. In a small bowl, combine ground flax seed with water and place in fridge for approximately 10 minutes to set.
.
.2.Mix flour, xantham gum, baking soda, cinnamon, ginger and cloves in a medium bowl.
.
.3. In a mixing bowl, combine melted coconut oil with sugar, molasses and flax seed mixture.  Mix well. Add dry ingredients to wet ingredients.
.
.4. Chill dough for 30 minutes
.
.5. Roll dough into small balls (about the size of a ping pong ball) and roll into white sugar.
.
.6.  Place cookies onto a baking sheet lined with parchment paper. Bake at 350 degrees for approximately 8 minutes until tops of cookies are cracked

GLUTEN FREE EATS: A full showcase of the feast we had at 100% #glutenfree pub @duke_barming in Kent. They do SERIOUS puddings (pecan pie and sticky toffee pictured - that toffee sauce was epic), a huge tapas menu, fish and chips and of course roast dinner (with yorkies) on Sundays. A real gem near Maidstone that coeliacs should add to their must visit list. Think proper pub grub with no cross-contamination issues - bliss! 🥞

Getting into the Thanksgiving mood with this fresh kale salad topped with roasted squash and Apple Ginger Seednola 🙌🏽 Sturdy greens like kale are the perfect base for hearty toppings like roasted root vegetables, plus they're in season well into the fall! 🍁🍂 📷: @fortheloveofbod

🥧Pumpkin Pie Minis🥧
Ingredients:
For the crust:
1 1/2 cup almond flour
2 Tablespoons pure maple syrup
1 Tablepsoon water
For the filling:
1 cup pure pumpkin puree
1/2 cup baked & mashed sweet potato
1/4 cup pure maple syrup
1 teaspoon pumpkin pie spice
Directions:
1. Mix together the crust ingredients with a fork until well combined. It should be crumbly but stick together when pressed.
2. Spray your muffin pan with coconut oil, & place a strip of parchment paper in each for easy removal.
3. Press the crust into the muffin tins, covering the bottom & sides evenly. Wetting your fingers can help if it is too sticky. You should have enough crust for 4 pie cups. Set aside.
4. Preheat the oven to 375 F.
5. Blend the filing ingredients until smooth & creamy.
6. Pour into the crusts, & smooth the tops.
7. Bake for 30 minutes.
8. Cool, & then chill overnight (or at least 8 hours). Keep in the fridge.

It's a couple days before Thanksgiving 🦃 and I'm craving those staple foods! 🍴 So, I incorporated some into this delicious treat 🙊
What's in my bowl:
Zucchini, cauliflower, butternut squash, banana, cinnamon, @furtherfood collagen peptides (10% off when you use discount code JESSICA10), adaptogens, mct oil powder, and water. Blend and top with cacao nibs, coconut shreds, and PUMPKIN PIE spice 🍰🥄
