Maple glazed Brussels sprouts bowl by @brusselsvegan (my personal account) 💚🌱 Ingredients: 2 tsp olive oil 2 cups brussels sprouts, halved and outer layer removed 2 cups frozen butternut squash (or pre-cooked fresh butternut squash) 1 pinch of sea salt 1 cup cooked kidney beans 2 tbsp maple syrup Dressing: 2 tbsp mustard
Directions: 1. In a pan over medium heat sauté brussels sprouts in olive oil for 5 minutes. Then add butternut squash and cook for another 5 minutes. Sprinkle with salt. 2. Next, add kidney beans and maple syrup. Cook for another 10 minutes on medium heat. 3. Transfer to a bowl and top with mustard.

Currently drowning in accounting homework and projects but nothing that a nutritious and filling lunch can't fix 😉 All this energy is going straight to my studies 👊🏻 Today's lunch is a baked sweet potato, chickpeas, peas, cherry tomatoes, half an avo (always) and spinach. I started sorting out my life yesterday. That was long overdue. Next semester starts next week and I don't want to ruin it again... I need to get my shit together so that I can graduate at the end of the year. I feel so lost and demotivated sometimes, because though it is a pretty interesting major, I don't want to work in that field, at least not forever, and I have problems with exam anxiety, so the end of the semester is always hell for me. I try to do as best as I can, and hope that's enough.
