I don’t think there’s anything more satisfying than a meal that is both sweet and savory! So, starting my day off on the right note with a sweet kabocha squash, roasted chickpea and pomegranate salad, alongside a delicious protein-packed egg white omelet. I always make sure to buy organic eggs and egg whites like these from @chinovalleyranchers. Their Organic Egg Whites come from hens that live on free-range farms and are fed organic, non-GMO grains & seeds from pesticide-free fields. Happy hens = Happy ME :)

Here’s a sample day of what I’m eating this week:
Morning to noon: if I work out in the morning, then I’ll have my @womensbest BCAAs with it. Then the rest of my morning, I’ll only have herbal tea or water. Been doing 16-8 IF for over a year and love it! It takes the hassle out of breakfast planning and has lots of health benefits too.
Lunch: cauliflower rice, roasted butternut squash, roasted spaghetti squash, steamed kale and sautéed grass-fed ground beef.
Snacks: I’ll have snacks in between lunch and dinner. Green apples, raw coconut meat and avocado with rice cakes are my favorite!
Dinner: Curry Chicken Stew (check my last post for the recipe).

Mint Chocolate Protein Bars
1 1/4c walnuts
1c @quaker oats
10 pitted dates
2 scoops @alohamoment chocolate protein
1tbsp maple syrup
1/2tsp peppermint extract
Pinch of @primalpalate sea salt
Blend all ingredients in food processor, flatten dough into pan, cut and enjoy! Store in fridge or freezer 🤗

A hearty lunch today with seasonal vegetables.

Today I learned something really important. 
The key to a diet is moderation NOT severe restrictions. ❌🚫
Having very restrictive diets was really what always made it tough for me to commit. I couldn’t suppress my cravings. 
I LOVE pasta. 😍😍 Forget the protein pasta (although it is good). I want REAL regular pasta. I kept hearing that pasta is too high in carbs, its bad for diets, yada yada yada… 😒
High on carbs? So what?! I mean I don’t have to have a ton of pasta, just a little bit is enough.👌🏽
Moral of the story:
Don’t make yourself hate your diet by restricting yourself from having your favorite food. #countyourmacros and have an acceptable amount.👍🏽👍🏽👍🏽

Ok so who else loved sloppy joes when they were younger??🙋🏼‍♀️ [Side note: Anyone ever wonder who came up with the name sloppy joe? Like who is Joe? Why is he so sloppy?? Crockpot Sloppy Joes
2 lbs ground turkey
1 onion, chopped
4 garlic cloves, minced
2 1/2 cups tomato sauce
1 tsp paprika
1 tsp salt
1/2 tsp pepper
1 Tbsp coconut sugar (or brown sugar)
2 tsp Worcestershire sauce

Directions
1. Cook turkey & place in the crockpot.
2. Add rest of ingredients to the crockpot & stir to combine. Cook on low for 2-3 hours.

Unintentionally made a #meatlessmonday dinner tonight. I saw these @beyondmeat sliders at @wholefoodsnyc and I was beyond curious (see what I did there? 😂). Paired the sliders with a whole grain mix and a fall/winter salad (since apparently it's still fall technically 🤷🏻‍♀️). If you're curious, the meaty non-meat sliders were delicious and a great source of plant-based protein. 💁🏻

This week I was craving Mexican🤤 (again) so I whipped up this convenient taco turkey lasagna.🙌🏼 This delicious casserole uses tortillas instead of lasagna noodles, and salsa instead of marinara sauce. It's tastes just like a taco🌮 when topped with diced tomatoes, shredded lettuce, black olives, and nonfat plain Greek yogurt (tastes like sour cream)! #Vegan subs on the blog👍🏼

12 small corn tortillas
15-oz. can fat free refried beans
2 lbs. 93% lean ground turkey*
1/4 cup reduced sodium taco seasoning*

1 cup red bell pepper, chopped
1 cup green bell pepper, chopped
1 cup mild salsa
2 cups reduced fat Mexican cheese*

I made this GLUTEN FREE/ PALEO Tabouli a few months back & I will be making it again for tonight’s dinner, paired with Lamb Koftas + Homous 👌🏼
Make your usual Tabouli but replace the Bulgar wheat with Cauliflower. I just pulse the cauliflower in the food processor as if you’re making cauli rice, cook it for just a few mins (for easier digestion), then once it’s cooked, add it to your Tabouli.

Another happy dance this week! 💃 So far, I’m down ten pounds in two weeks and Hubby is down thirteen. Crazy, right? 🙀 The keto diet is probably the best way of eating I’ve found. It’s easy, keeps me satisfied, and gets results! 💪🏻 I haven’t posted many meals lately because we’ve been eating mostly the same prepped meals which would be boring to keep taking pictures of, but we’re trying some new recipes this week that I’m excited to share!

#Salad number two!! I used leftover chicken, lettuce, broccoli slaw, and a whole lot of blue cheese (because #ilovebluecheese ), and some buffalo sauce. Salads don’t have to be boring! Change it up my friends! I would say this meal came out to $3-$4 dollars.. ish.

I hope you guys aren't sick of my doughnut posts yet- because I have another one😅 I'm not kidding though- you have to try them if you haven't yet! I'm sharing them so often lately for a good reason-they are that GOOD🍩

Today I am sharing a chocolate version of my gingerbread doughnuts (link in my profile to that recipe-perfect companion to holiday parties or for a holiday treat)! If you're a chocolate person these are the treat for you 🙌
.
1 1/2 cups almond flour (I love @bobsredmill superfine)
1 tsp baking powder
1/2 tsp pink salt
2 tbs golden @lakantosweetener (or brown sugar)
1/2 cup powdered @lakantosweetener (or sweetener of choice)
1/4 cup + 1 tbs coconut butter (I use @nutiva or @artisanaorganics )
1/4 cup + 1 tbs MCT oil (or @bulletproof brain octane or XCT oil)
1/4 cup sunflower seed butter (I the use @sunbutter no sugar added one)
2 eggs
1 tsp vanilla
1/4 cup collagen peptides (link in my profile for the one I use!)
2 tbs water
2 tbs cacao powder
1/2 cup sugar-free choc chips or dark chocolate (I use @lilys_sweets_chocolate or @lindt_chocolate 85-90% dark- this contains a very low amount of sugar!)
Topping: powdered sugar of choice (I used @lakantosweetener but it does have a "cooling" effect (from the erythritol) when it's not incorporated into a recipe-so if you think you wouldn't t like this use regular powdered sugar or you can dip them in MCT oil & then stevia or granulated sweetener of choice to avoid this taste!)- they also taste great plain, or topped with melted coconut butter or melted dark chocolate!

1. Preheat oven to 350 C & grease a silicon doughnut pan (or muffin pan!) w/ ghee or oil.
2. Add all of the dry ingredients to a large bowl.
3. Add the wet ingredients & mix with hand or stand mixed until well incorporated.
4. Melt the chocolate in the microwave or over low heat on the stove & mix into the batter.
5. Pour the batter to greased doughnut or muffin pan until filled & place in the oven to bake for about 10-15 minutes making sure to not over-bake! The top will slightly spring back to the touch when done.
6. Remove from oven & let cool.
7. Top w/ powdered sugar, stevia or melted dark chocolate &/or coconut butter & enjoy!🤗

Finally upgraded my old spiralizer for @theinspiralizer and experimented with purple sweet potatoes this morning 🍠 They are sweeter and milder and have a really interesting taste. I spiralized them, combined them with one egg and some Everything Bagel seasoning, then formed bundles and fried them in @chosenfoods avocado oil spray until crispy on both sides 🥑 Topped with fried @vitalfarms eggs and lots of dill that I picked this morning from our @towergardenofficial indoor garden 🌿Such a delicious, filling breakfast and a great way to start the week! 🍳🙌🏻

Happy Monday friends! Are you ready for the week ahead?!
Here’s a sample day of what I’m eating this week:
Morning to noon: if I work out in the morning, then I’ll have my @womensbest BCAAs with it. Then the rest of my morning, I’ll only have herbal tea or water. Been doing 16-8 IF for over a year and love it! It takes the hassle out of breakfast planning and has lots of health benefits too.
Lunch: cauliflower rice, roasted butternut squash, roasted spaghetti squash, steamed kale and sautéed grass-fed ground beef.
Snacks: I’ll have snacks in between lunch and dinner. Green apples, raw coconut meat and avocado with rice cakes are my favorite!
Dinner: Curry Chicken Stew (check my last post for the recipe).
