6 big chicken breasts, black beans, corn, diced tomatoes, diced green chiles, cilantro, lime or lemon juice, cumin, garlic, salt, pepper, and paprika. Cooked in my @gowiseusa #14qtpresurecooker for 25 minutes.
I served it two ways, in a burrito and on top of a tostada shell with a side of Spanish rice.

My side dish tonight. Artichokes are a fabulous source of fiber, vitamins, minerals, and antioxidants. Add in some healthy fat by melting some @kerrygoldusa butter for dipping. Because (fellow NTP students-say it with me) “butter makes everything better” (it’s true)!!!

Honey-Lime Sweet Potato, Black Bean and Corn Tacos with a side of chili powder roasted cauliflower!
Taco Ingredients:
1 1/2 lbs sweet potatoes , peeled and diced into 1/2-inch cubes
4 Tbsp olive oil, divided
1 tsp cumin
1 tsp paprika
1/4 tsp ground coriander
1/8 tsp cayenne pepper
Salt and pepper
1 small sweet onion , diced (1cup)
1 clove garlic , minced
1 (14.5) oz can black beans, rinsed and drained
1 cup frozen sweet corn 
3 Tbsp honey
3 Tbsp fresh lime juice
Corn tortillas
purple cabbage .
Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Toss diced sweet potatoes with 3 Tbsp olive oil, cumin, paprika, coriander, cayenne pepper and season lightly with salt and pepper to taste. Spread on baking sheet. Bake in preheated oven 15 - 20 minutes until tender, removing from oven and tossing once halfway through baking.

Meanwhile, in a large skillet, heat remaining 1 Tbsp olive oil over medium-high heat. Once hot add onion and saute until caramelized (golden brown on edges and tender), about 5 - 6 minutes, adding in garlic during last 30 seconds of sauteing. Reduce heat to medium-low, add in drained black beans, corn, honey and lime juice. Heat until warmed through. Toss in roasted sweet potatoes. Serve over warm tortillas with desired toppings and purple cabbage. Enjoy! .

Broke out the panini maker for dinner. Reduced fat Colby Jack, 1 slice of lean ham, tomatoes and bleu cheese mustard. I'm still learning the hang of the panini maker. The bottom slice of cheese was barely melted 😞
