I don’t think I have the healthiest diet out there by any means, but I try and eat simple whole food that helps me reach my goals. I aim to get better with diet over time but right now this is what most days look like. I was a bit over on fat and a bit under on protein on this day, but it’s fine. .
Breakfast: bagel with almond butter, a little chocolate spread, a banana, and a sprinkle of flaxseed.
Lunch: rye bread with eggs and avocado
Dinner: salmon with rice and veggies
Snacks: protein bar, cashews, pink apple, dried gogi berries, peanut butter, sachet of instant oats, pot of Greek yoghurt (not pictured as it ate it just before bed)

See the metal straw in the finished product? That comes everywhere with me . I use the lil pen holder in my purse to keep it in place and I try and remember to ask for my drinks with no straw whenever I’m at a cafe or restaurant - after a presentation from @parley.tv earlier this year I’ve been far more aware of my plastic consumption and single use plastic straws are one of the worst culprits. It’s a tiny thing, but you can start saying no to straws too, maybe get an environmentally conscious loved one a metal straw for Christmas, I love mine and it’s such an easy swap☺️

I may not be in the best shape of my life, but for running around between work, workouts and my internship 5am-8/9pm m-f then doing homework at night and on weekends, I feel like I do pretty damn good. The only way I’m able to stay on track is this right here. I’ve been meal prepping my protein, veggies and carbs in bulk for each week for the past couple of months now and it’s been a huge time, money and sanity saver for me. If you don’t meal prep now I recommend starting—after tracking intake, meal prepping is always one of my first recommendation to kick start results with nutrition!

How to make a hearty lunch salad that will actually keep you full and properly fueled:
1. Pick a grain like quinoa, wild rice, couscous.
2. Add the rainbow of veggies, at least something green, something starchy, something bright and something crunchy
3. Add a nut/seed like sunflower seeds, pumpkin seeds or toasted almond slices.
4. Make a homemade dressing with tahini, mustard, lemon juice, s & p, siracha and water
5. Add protein on top or on the side like chicken, sausages, tofu, Tempeh etc.

For meal prep this week I made this quinoa salad with 1 cup dry quinoa (cooked), sauted balsamic mushrooms, roasted purple and orange sweet potato, kale, orange bell pepper, fennel, & sunflower seeds. Plus I'm making some chicken to go with this 💚

Inspired by @flora_and_vino and made some chocolate bark 🙌🏽😋✨ So DELICIOUS 🤤 I had to walk away or eat half of this tonight 😱😂✨ I melted down two blocks of @lilys_sweets_chocolate (70% dark, sea salt, sweetened with Stevia, vegan)... let the chocolate cool and poured it over all my fav superfoods: raw almonds, raw pistachios, gojiberries, unsweetened coconut flakes, and hemp seeds...topped with a drizzle of Himalayan pink sea salt and sit in the refrigerator for 2 hours...YUMMY 😍✨ A healthy low sugar snack or dessert that taste great...try it!

We've been really sick here this last week 😱 the sickest we've been in a long time...so easy meals. I try to always have broth on hand. Homemade from our thanksgiving turkey! I make it and keep one jar in the refrigerator then freeze the rest in ice cube trays and defrost as needed.
Today I added leftover chicken and mashed sweet potatoes (jersey sweets) to the broth and added frozen broccoli. Heated and served.

Dinner was on point...prepped a large pot of quinoa, roasted corn, black beans, and sautéed red onion/red pepper in coconut oil, all topped with homemade guacamole 😋😍✨ Healthy protein, healthy fat, and carbs. I’m adding digestive enzymes into my everyday route. I want to make sure my food is absorbed to the fullest so I can feel my best everyday! Also, doing more intuitive eating. 2 lbs. pork shoulder
2 Tbsp. Olive oil
2 tbsp. Balsamic vinegar
3 garlic cloves
1/4 cup fresh rosemary or 2-3 Tbsp. dried
1 tsp. coriander seeds
1 tsp. fennel seeds
1 bouillon cube
Salt and pepper, to taste
2 sweet potatoes, cubed
2-3 carrots, peeled and chopped

Turned out I somehow put the correct bsb but a different account number (which I do hold) that doesn't match the bsb 🙄 so now I probably won't get the money until late next week at best or early new year with the public holidays happening 😫 feeling extra stupid and no idea how I managed to do that, I have had a million things on my mind lately especially the week when I couldn't afford to do a course i wanted (turned out to be the best) because the repayments were too high for me to afford (despite my 700 deposit which I am getting refunded 🙄) .
I'm trying to tell myself that my current situation is not my final destination 👊 Atleast I am getting my money back even if it will take longer than expected. I will be going back to study soon, and i will have paid off some car expenses so I won't have anything extra to owe anywhere.....deeeep breaths

Well it’s been a really weird week 😒 I felt myself getting ill and only managed to go to the gym twice which just makes me feel rubbish. I knew I needed rest but I don’t even feel any better 😩 I have stuck to my macros except for last night and a little bit over on Friday night. Today’s have been estimated for 60-70% worth, but because I’ve not been gym I just feel like I’ve rewound time and undone any progress which is really annoying me! I don’t know if it’s cos I’m dehydrated that I just feel uncomfortable and ugh ☹️ but I’m so ready to wake up tomorrow, hit my macros 100% to the gram and just own a gym session. I actually don’t think my mental state could handle ‘never going to the gym again’ I need it just to feel human, today I feel like the hungry caterpillar pre cocoon. Waah😞🐛 -
