最後の日はクラスメートの子達6人からお手紙を頂きました。皆、あやにお手紙を書きたいと言って、自発的にお家で書いて来て持って来たと聞いて感動+ちゃんとお友達がいなくなってしまうということを理解していて感心。お友達と仲良くやっていたみたいで嬉しいです。

夏に日本に帰って来たのはオーストラリアに移住して以来なので14年ぶり。久しぶりの夏は蒸し暑くて、蚊には刺されるし虫もいっぱい家に入って来るしで大変でしたが、やっぱり日本の夏は良いね。蝉の声を聞いていると、小学校の夏休みを思い出してすごくノスタルジックな気持ちになります。

AVOCADO TOAST WITH SOFT-BOILED EGG
INGREDIENTS
4 EGGS
4 SLICES WHOLEMEAL BREAD, TOASTED
1 AVOCADO, MASHED
1 TEASPOON WHITE CHIA SEEDS
1 TEASPOON SESAME SEEDS
1 TEASPOON CUMIN SEEDS
SEA SALT AND CRACKED BLACK PEPPER
MICRO (BABY) MINT SPRIGS, TO SERVE
LIME WEDGES, TO SERVE
METHOD
Place the eggs in a saucepan of boiling water and cook for 7 minutes+. Drain and refresh under cold water. Peel, slice in half and set aside.
Place the toast on plates and top each slice with the avocado and egg. Place the chia seeds, sesame seeds, cumin seeds, salt and pepper in a small bowl and mix to combine.
Sprinkle the seed mixture and mint over the avocado and serve with lime wedges. Serves 2.

GREEN KIWI SMOOTHIE BOWL

INGREDIENTS
1 frozen banana
1 kiwi fruit OR 1/2 green apple or 1/2 kiwi + 1/4 green apple
1/2 c spinach/silverbeet/kale
1 tbsp chia seeds
2 tbsp avocado
1/3 c water
1/8 tsp spirulina optional
TO TOP:
Kiwifruit diced green apple, mint leaves, chia seeds
INSTRUCTIONS
Blend all ingredients in a high speed blender for 30 seconds until super smooth, scraping down the edges after 20 seconds as needed.
Top as you please and enjoy! I used some extra fruit and chia seeds, along with mint for flavour but you could also sprinkle on your favourite granola or cereal for a super-filling breakfast - I personally love these ones here and here for smoothie bowls!
RECIPE NOTES
The avocado is optional - it definitely gives a creamier texture and taste (which I love), but the bowl is still delicious without (more fruity, icy, and refreshing).
The chia seeds are also optional, but help to keep the bowl nice and thick, especially if you’re taking on the run.
Use whatever dark leafy greens you have available (or in the garden) - spinach, silverbeet, and kale all work well.
The spirulina is optional, but adds extra nutrients such as protein and iron. Instead, you could also add chlorella, your favourite greens powder blend, or even matcha powder

This is almost 2L of honey yoghurt made with fresh milk from our Jersey cow, local honey, vanilla, yoghurt cultures from the previous batch and it’s pimped up with Young Living’s Life 9 probiotics. It’s incredible.
I’ve been making it for years. My children eat it by the bucket load and it’s sooooo easy to make. Blog post coming hopefully over the weekend with the full recipe. You don’t need a cow to make it 😋 but I can guarantee your children will think it’s the best yoghurt they’ve ever eaten (and it won’t have refined sugar or weird ingredients / numbers in it). My children were literally standing over me salivating with a spoon as I took this photo so they could get stuck into it. Love they get a nice dose of good bugs in every serve 💕

2 chopped @vitalfarms pasture raised eggs mixed with 1/2 an avocado + chopped fresh dil & fresh chives + sea salt & pepper. .

Topped on paleo bread with spinach. SO good!!

Deciding on my next book to read. Evenings get so hectic and I’m too tired 😩 to read at night so I’ve started reading in bed in the morning (so comfy in bed I could stay and read all day 😊) – I feel fresh and can concentrate more and of course no interruptions. I used to be able to read a book in a couple of days ( before I had kids 😆) but now it takes me a lot longer and if I actually try to get through it quickly I struggle to retain what I’ve read 🤔.
