Ingredients:
4 eggs
1 pack tenderstem broccoli
1 sweet potato, chopped into thin wedges
Baby carrots halved lengthways
Olive oil
Sea salt and pepper

Method:
1. Preheat the oven to 200 degrees fan. Line a large baking tray and place the prepped sweet potatoes on the baking tray, drizzle with some olive oil, salt and pepper and bake for 20-25 mins until cooked through and crispy around the edges.
2. Once the sweet potato has been cooking for about 5 mins, add the tenderstem broccoli and carrots to the pan as well, drizzle with a little olive oil, and season with a pinch of salt and pepper. Meanwhile, boil the kettle.
3. Fill a large saucepan with boiling water, on high heat and bring to a gentle boil on the hob.
4. Place the room temperature eggs in the boiling water and cook for 3 ½ mins for soft boiled eggs (or 4 mins for particularly large eggs). Remove the eggs from the pan with a slotted spoon and place in your egg cups.
5. Remove the roasted veg baking tray and sprinkle with a little sea salt whilst they’re hot, then transfer to your plates, slice the top of the boiled eggs off and get dipping!

I share a tiny studio with Rocky I don't have equipment or any fancy set-up. I got me and I got determination. 💪🏽 In this small space right here....this is where I lost 25lbs, gained muscle, and got some abs 🙌🏽 No fancy gym membership or running ever did that for me.

Today was strength training day and I didn't even need weights. My triceps are KILLIN me 😳 Ya'll want to know how my arms got like this?? A combo of tricep dips with one leg raised + push ups + sweat 👍🏽.

Listen, your health and wellness is not about having a lot of space, or going to the gym, or even having "time"....Working out and being healthy is not a project or a side hobby...friends, we're talking about our bodies and our lives!!
