Shōdoshima (Island of small beans) in the Seto Inland Sea has a 400 year tradition of soy sauce production. One of the soy sauce factories is Kinryo, established in 1880 by a resident doctor, now in its 5th generation. This 360ml bottle 'whisper of soy' sauce has been fermented for 2-3 years and is limited to one vat per year. Some more 'wa'(和) meets ZA. This small size tabletop 'asagao' shichirin charcoal stove references the petals of a morning glory flower. It is hand-cut from diatomaceous earth ('keisodo'), which is a sedimentary deposit of fossilised remains of single-celled planktonic algae found in the Noto Peninsula. It has been fired for 45 hours at 800 degreees and is porous and light with excellent insulating properties for cooking while you eat. To give a sense of scale (and occassion), we paired it with a bottle of 2012 Beeslaar Pinotage. The 2015 vintage was just named Tim Atkin's SA Red Wine of the Year 2017 - congratulations! The first historical record of paper-making in the old Musashi Province, where Ogawa (now in Saitama Prefecture) is located, is from the year 744. These 55 x 91mm blank business cards are handmade from Ogawa washi and mixed with wood pulp to give them strength.
