Did you know that bacteria and yeast coexist in nature? If bacteria has found a home in various habitats then you’re likely to find yeasts right along side! It’s no surprise that they have a symbiotic relationship within the kefir starter. Kefir grains are a SCOBY, just like a kombucha SCOBY. The bacteria and yeast both enhance the culturing of milk kefir. Once, my kefir grains grew off balance. The yeast grew too strong and instead of thick, creamy kefir I got yeasty, runny milk. 😝 They really do work together to give you perfect kefir. Don’t take for granted the delicate balance of nature!!
