Having a crazy snow day here in Denver, so I'm staying inside and creating. Started my day with this kale and purple cabbage egg bake for one, which is so easy to make I figured I'd share. 🤗 FYI, you can do this with pretty much any sautéed veggie base.
Preheat oven to 350F. Sauté ~1 cup purple cabbage and whites of 2 green onions in ghee/olive oil. When cabbage is tender, add ~1 cup chopped kale and sauté until kale cooks down. Season with salt, pepper, cumin, dash of cayenne, and splash of lemon juice. Remove from heat and create two small divots in the veggies, adding a bit of oil if necessary. Crack eggs into each hole and transfer to oven. Bake for ~8-10 minutes, remove from heat and cover for another 2 min, until eggs are set. Top with greens of green onions, pepitas, watermelon radish, and fresh cilantro. Serve straight up or on corn tortillas... or eat it right out of the skillet. 🍳
