Flapjack Friday - Fall edition! 🥞🍎🍂 Today I woke up to chilly weather & foggy skies and that can only mean one thing.... Fall is approaching! [Can you tell I’m excited 😜] ⠀

In the spirit of festivity, I whipped up a stack of these Apple Spice Blender Flapjacks and topped them with @sistersfruitcompany cinnamon apple chips and fresh apple slices 😋🍎 [Their apple chips taste like candy and I may or may not go through a bag in one sitting...]⠀

Here’s the recipe!⠀
• 1 cup coconut milk ⠀
• 1/2 cup unsweetened apple sauce⠀
• 2 eggs OR 2 flax eggs [2 Tbsp ground flax seed + 6 Tbsp water, let sit to combine for 10 min]⠀
• 1 tsp vanilla extract⠀
• 1 Tbsp maple syrup⠀
• 1 tsp baking powder⠀
• 1/2 tsp cinnamon⠀
• 1/2 tsp apple pie spice ⠀
• 2 cups GF old fashioned oats ⠀
• dash salt⠀
• Optional topping: half an apple, cooked on stove with a little coconut oil and cinnamon⠀

Add all ingredients to a blender until combined. Heat griddle and pour about 1/8 cup mix per pancake. Recipe makes about 10 pancakes. Top with @sistersfruitcompany apple chips + sautéed apples + a little maple syrup 🍎 ⠀

[French] Toast Tuesday! 🍞🍓 Ft. my Vegan French Toast recipe made with @seattlebaking sourdough☀️ ⠀

Being that I can no longer have eggs, I was bound and determined to make a vegan French toast soooo tasty, I didn’t miss them! & I’m proud to say... THIS IS IT!⠀
.⠀
.⠀
Recipe:⠀
• about 10 slices of @seattlebaking Old Town bread (THICK slices! 😍)
• 2 cups coconut milk⠀
• 1 tsp cinnamon ⠀
• 1/2 tsp vanilla⠀
• 1 Tbsp maple syrup ⠀
• coconut oil spray for the pan ⠀
.⠀
Mix together the coconut milk, cinnamon, vanilla, and maple syrup. Heat a skillet and dip each slice of bread (lightly) into the mixture. You don’t want to drown the bread in the mixture or it may be too runny/soggy. I like to use a shallow bowl to dip the top, flip it, and dip the other side lightly. Spray the skillet with coconut oil and cook the French toast slice on each side until crispy (about 3-5 minutes each side depending on the heat). Once they’re ready, top with a little extra maple syrup and fresh berries! 🍞🍓⠀

I added a seasonal twist using @wild_friends Sugar Cookie Peanut Butter (yeah, you heard that right!) 🍪 Wild Friends has launched their seasonals and I couldn’t be more reaaaaady to make some fun holiday treats with them 🥜⠀

Here’s how you can make @rachaelsgoodeats recipe with my twist!⠀
Filling:⠀
• 1/2 cup @wild_friends Sugar Cookie PB⠀
• 1 Tbsp maple syrup (cut because this PB is sweet on its own)⠀
• 2 Tbsp coconut oil, melted⠀
• 1 tsp vanilla extract ⠀
• 3 Tbsp @vitalproteins Collagen Peptides ⠀
• 5 Tbsp coconut flour ⠀
.⠀
Outer layer:⠀
• 1 bar of dark chocolate (I used @eatingevolved )⠀
• 1 Tbsp coconut oil, melted⠀
• sprinkle of sea salt⠀
.⠀
Mix together PB, maple syrup, coconut oil, and vanilla. Stir in collagen peptides (optional) and coconut flour. Roll into balls (makes about 13-14) and set on parchment paper. Transfer to freezer for 10 minutes. Melt chocolate bar and coconut oil in double broiler or in the microwave. Using two forks, dip the balls into the chocolate mixture and set on parchment paper. Sprinkle on a little sea salt. Put back in freezer for 15 minutes - and enjoy! 😋🥜🍫⠀

I’m whippin up this pasta for dinner, so don’t be surprised if I start speaking Italian & prancing around my kitchen like I’m on the streets of Italy 😍🇮🇹🌱 [which would be impressive considering I don’t know Italian] 😜 I have FINALLY perfected a vegan pesto that I lovvvve & I cant wait to see what you think! ⠀

Vegan Pesto Recipe:⠀
• 2 cups fresh basil (packed)⠀
• 1 cup spinach ⠀
• 3/4 cup pine nuts ⠀
• 3 cloves garlic, skin removed⠀
• 1 Tbsp nutritional yeast ⠀
• 1/2 tsp salt⠀
• 1/2 tsp pepper⠀
• 1/2 cup olive oil ⠀

Food is my love language 💗 Which is why it’s particularly hard for me to cope with having a laundry list of food allergens. BUT, it’s also why I am determined to learn to love food again. ⠀

Over the past month or so since I learned of my allergens (alongside Candida and Leaky Gut), I would be lying if I said I haven’t thought “WHY ME?” I eat healthy. I exercise regularly. Heck, I even take vitamins when I’m feelin extra snazzy. So WHY is it that my body is rejecting so many of the foods I love? What could I have done to avoid this? .⠀
Truth is, it’s nothing I would have been able to control. I didn’t know that the repeated rounds of antibiotics I needed for a condition I had in college would soon catch up to me. I didn’t know that the foods I ate every single day triggered my sensitivities and would lead to compromised gut health. Had I known any of this, I guarantee I would have reconsidered my treatment options. ⠀

Nonetheless, here we are. I can either dwell on it, OR I can make the most of it and use it to fuel my creativity and passion in the kitchen 👩🏻‍🍳 Slowly but surely, I’m choosing the latter. Sometimes it leaves me crying in my failed zucchini bread loaves, but by golly I know it will be worth it! 🙌🏻⠀

• 2 Tbsp coconut oil, melted⠀
• 1/2 tsp cinnamon ⠀
• 1/4 tsp nutmeg ⠀
• 1 cup coconut milk ⠀
• 2 cups @bobsredmill 7 grain pancake mix⠀
• 1/2 cup fresh blueberries (washed and patted dry) ⠀

Mix together the coconut sugar, apple sauce, vanilla, oil, and spices. Stir in the milk. Stir in pancake mix. Fold in blueberries. Fill the muffin tins about 2/3 full (makes 12 muffins). Bake 350 for 20-25 min & enjoy! 👩🏻‍🍳💗⠀

I tossed a handful of frozen blueberries, spinach, scoop of @amazinggrass vanilla Protein + Kale, 1 scoop @amazinggrass beauty elixir (adaptogens and greens blend), 1 scoop @vitalproteins dark chocolate + blackberry collagen peptides [🤤], 1 Tbsp chia seeds, 1 1/4 cup coconut milk, and ice into the blender - then poured it in my glass before running out the door! 💚 ⠀

Simple summertime dinner ft. my 5-minute-prep Sesame Ginger Chicken 🍗 & a summer salad filled with spring mix greens, blueberries, beets, strawberries, snap peas, cashews, and @annieshomegrown strawberry salad dressing 🍓🥗⠀

This dinner took me less than 10 minutes to prep + 20 min for grilling the chicken, making for the perfect quick weeknight meal! [with plenty of chicken leftovers for the week 👏🏻] ⠀

Grilled Sesame Ginger Chicken Recipe:⠀
• 1.5-2 lbs thin sliced chicken breast⠀
• 1/2 bottle @annieshomegrown Sesame Ginger dressing⠀
• 1 tsp garlic, minced (or the fresh paste that comes in a tube, if you’re lazy like me)⠀
• 1/2 tsp grated ginger (again, opportunity for fresh ginger paste) ⠀
• optional: dash of @traderjoes everything but the bagel seasoning ⠀

Mix together marinade ingredients in a large bowl, add in chicken, let sit covered in the fridge to marinate or throw them right on the grill to get started! 🍗 Flip halfway through and check that the temp has reached 165 degrees F before serving. Enjoy! ☀️

[and don’t be fooled, patience is also important when waiting for your partner to vacuum like they said they were going to... haha] ⠀

💗 Never compare your relationship to those of others. Easier said than done, but wishing you had the “perfect” relationship like you see on social media only takes away from the beautiful, messy, loving relationship that you have right in front of you. Your relationship is unique just as you are, and spoiler alert: the people who have highlight-reel-worthy relationships argue too. What is important is how you overcome those times and push forward, using each confrontation and disagreement as a lesson in growing closer together. You’re not perfect and that’s okay. ⠀
