The first picture is of me getting ready to go out with hubby last night wearing size 8 pants! Size 8! Guys, I started in a size 14 just 10 weeks ago! I haven’t worn this size since late 2013/early 2014. Then this morning I decided to try on some other size 8’s expecting them to not be able to button. Not only did they button, I look great in them! I’m a big fan of high fiber meals👩🏼‍🍳 Ingredients: •3/4 cup cooked whole grains (I used oatmeal)
•1/2 cup unsweetened almond milk •2 tablespoons smooth peanut butter
(Or any nut butter) •1/2 small organic gala apple •2 teaspoons raw honey •1 tablespoon sesame seeds
•1 tablespoon poppy seeds •1/2 cup blueberries •1 spoonful of @vitalproteins collagen unflavored powder

Easing back into eating carbs. Oh delicious carbs. My breakfast of rice cake with almond butter, sprouted 7-grain bread with roast beef and cheese, strawberries, and hot matcha collagen. I'm pretty carb sensitive but can do a little if I keep it clean and on the low side. The high fat eating was making me feel sluggish. The whole meal is only 400 calories.

All about a savory dark chocolate and peanut butter combination and this recipe is my new favorite! They are not super sweet but they definitely satisfy that “dessert” craving!

Peanut Butter Protein Cups

1 cup Natural Raw Peanut Butter
1/4 cup Raw Honey
1/2 cup Oat Flour
3 scoops @vitalproteins Collagen Peptides
20 ounces dark chocolate chips, melted (I made my own melted chocolate by combining coconut oil with unsweetened cocoa powder to help cut refined sugar and dairy- I mixed about 1/2-3/4 cup coconut oil with 1.5-2 cups unsweetened cocoa powder)

In a large bowl combine peanut butter, raw honey, oat flour, Vital Protein Collagen Peptides, and vanilla.
Use a hand mixer to comine.
Set aside.
In a microwave safe bowl, melt chocolate in microwave by heating in 30 second intervals. Stir well between each. When the chocolate is mostly melted, remove and stir until silky smooth. (If you mix coconut oil and unsweetened cocoa powder together just do it over the stove in sauce pan until they are well mixed-should only take about 2-4 minutes)
Line a muffin tin with foil liners or silicone liners!
Spoon about 3/4 Tbs melted chocolate into each tin
Scoop a ball of peanut butter filling out, and flatten into a patty, and press into the chocolate.
Spoon additional chocolate over the top
Tap muffin tin to even out the chocolate
Refrigerate for 10 minutes or so to set up the chocolate.

I personally like mine frozen and feel they keep better in freezer! ▫️
