organic mint leaves, 1C homemade coconut milk (somewhere in my feed), 1 frozen banana, 2Tbs @navitasorganics cacao nibs, 1/2C steamed then frozen cauliflower + 1/2 zucchini, 1Tbs chia seeds, 1 scoop of @vitalproteins vanilla whey protein and 1/2Tbs @sunpotion tocos for creaminess and vitamin d + e 👏🏼 i topped it off with my favorite @thecoconutcult probiotic cream and a dash of cinnamon 👅

I ❤️ fall mornings that involve trail running, hitting up the local farmers’ market, making roasted butternut squash soup, and spending every second with my little sidekick (👧🏼)... but now we both desperately need a nap! 😅🙃

🍂Roasted Butternut Squash Soup🍂
* 1 large butternut squash, peeled, seeded, cut into pieces (or 24 oz. precut👉🏻 sooo much easier!)
*2-3 apples of choice (I always use gala)
*1 small yellow onion, chopped
*2 tablespoons coconut oil
*1/2 teaspoon sea salt
*1/2 teaspoon ground black pepper
*1/4 teaspoon nutmeg
*1/2 teaspoon dried thyme
*2 cups warm water mixed w/ 1 scoop @vitalproteins bone broth collagen (vegetable broth could also be used) *1/2 cup milk of choice (I used unsweetened almond milk)

Directions: Preheat oven to 375 F. Mix the butternut squash, apple, and onion pieces with melted coconut oil, salt, and pepper and place on a large roasting tray. Roast for 45-60 minutes, or until they are soft and golden. Place the roasted veggies in a blender with broth, milk, nutmeg, and thyme. (If enjoying right away, transfer to a pot and re-heat). I topped my bowl with a drizzle of plain yogurt, pumpkin seeds, and a pinch of thyme.

My current favorite smoothie bowl recipe! 🌿 reFresh Smoothie Bowl
- one handful of frozen strawberries
- one handful of frozen blueberries
- 1 scoop @vitalproteins Collagen Peptides in Dark Chocolate and Blackberry - 1 TBS peanut butter
- 1/2 TBS honey
- ice
- add unsweetened vanilla almond milk to the blender until you get your desired consistency 🌿 Toppings
- blackberries
- chia seeds
- kiwi
- coconut flakes
- honey

2 cups hot water, 1 tablespoon of matcha I used @mizubateaco, 2 scoops of @vitalproteins marine collagen, a little honey, a dash of almond milk, and a tablespoon of coconut oil! Pure delish 🤗

For most of the first trimester and the past few weeks, I’ve had such a hard time eating high-quality protein. Or eating anything. But I feel so much worse when my stomach is empty. It’s a funny problem you don’t really realize until it happens to you, and then you read all of the cheerful how-to-combat-morning-sickness posts and not much really helps.

I call this my “what do you mean it’s already Monday?” face - pretty glam no?🙈😏 It’s 📦 moving week 📦 so I made these no bake on-the-go protein balls on Saturday to get us through busy mornings, and also dessert...
Recipe adapted from @gimmesomeoven with what we had in our fridge/kitchen...
1/2 cup chocolate chips
1/2 cup flaxseed meal
1/2 cup @traderjoes old fashioned oats
3 scoops @vitalproteins unflavored beef collagen
1/4 cup coconut chips
1/2 tsp cinnamon
2 tsp vanilla extract
1 tbsp agave or maple syrup
1/2 cup almond butter, but actually I just scooped out the whole bottom of a jar 🤷🏻‍♀️ Mix all together in a big bowl! Roll into balls. Roll in almond flour to coat if desired. Refrigerate overnight. EAT!

These are so fun to eat and highly adaptable. Switch up your syrups for honeys, coconuts for chia seeds, almond butter for other nut butters - the world is your oyster! #ballin

Started the 28 day #VitalProteins challenge today!!! Would have started it earlier but this weekend was bananas. Blended it with banana, almond milk, cinnamon and water. IT WAS DELICIOUS.
