My family can’t really bring me breakfast in bed as my insomnia always makes sure I’m up 3 to 4 hours before them. I was feeling so rough with my cold last night I went to bed super early so I was up even earlier this morning. So I made scrambled tofu with mushrooms and tomatoes with the usual black salt - turmeric - black pepper and nooch. Did add some violife cheese as well this morning. Having it with avocado 🥑 on toast and baked beans.
This #vegan#macandcheese is ridiculously simple to make. I warmed about 4 dl (1.5 cups) of #oatlybarista and added 1/2 a block of grated #violifecheddar to the pot and let the cheese melt. I also added about 1 tbsp flour to thicken the sause a little as well as 2 cloves of chili marinated #garlic and some salt.
During the time I made the sause I also boiled enough pasta for two but cooked them about 3 minutes less than recommended.
Mix the pasta and sause together and put it all in a oven safe container. Sprinkle bread crumbs over and cook for 15-20 minutes on 220C (430F) until golden. Enjoy!
So I haven’t been posting my dinner cause I been eating whatever I like and just having a break from everything except Family and work. Though tonight we had jacket potato and beans and cheese very comforting but very unexciting and I remembered that this meal came up on my most liked photos of 2017 which I still find hilarious with all the cooking I do.
