Made this #Fennel gratin yesterday - pretty nice for a different use of this tasty vegetable. Of course loads of #cheese are always a good idea too 😄
Cut 3 or 4 fennels in half (I removed the outer layers), and cook in a veggie broth until softened- but not too soft. These then go in a buttered oven dish. In the meantime you can fry an onion with 4 chopped tomatoes (I removed the skins this time, but that's optional). Add a little pepper and salt too, and then add this mix on top of the fennels. Then mix about 2-3 tablespoons of cream with 3-4 tbsp of the vegetable broth. Pour it over the fennel and tomatoes. Top with grated cheese- I used 2 sorts of cheese: Parmesan and a Swiss hard cheese with rosemary in it.
Bake for 15-18 minutes in a preheated oven at 200C and ready!
