Veggie Morning Wakeup Juice/Smoothie --
Kind of like a thicker version of veggie juice, with loads of fiber.
1 c Spinach +
1/2 c Cucumber +
1/2 c Beets +
A chunk of apple +
1 T Fresh ginger +
1/2 t Ground turmeric +
A couple of ice cubes (just to keep the juice from warming up as you blend) +
Splash of water
~
Blend on high until smooth, about 1 minute.
Drink and enjoy your day.

Happy Sunday! I'm obsessed with pre-cut veggies. @traderjoes has a ton of different options to make getting those veggies in easy. This is an asparagus, mushroom, onion sautéed mixture. I just sounded like a commercial. #veggiesforbreakfast #paleo #primal

Working in a start up environment, it’s easy to get swept up in the work that needs to get done every day to keep things happening (quickly). This week at @snapkitchen, we’ve spent a lot of time thinking about this past year’s successes, future menus, and how we can continue to better act on our core mission. We’re shaping the future of food, which is what I always dreamed of doing as a #dietitian. Our veggie-focused breakfast launch was just one of the projects I’m proud to have been a part of, and believe me when I say there’s more to come.

**NEW RECIPE** Banana, Tahini and Walnut "Porridge"

Ingredients (Serves 1)
• 1 cup cauliflower rice (approx. 1/4 head of cauliflower)
• 1 cup almond milk
• 1 pinch sea salt
• 1 teaspoon cinnamon
• 1 teaspoon vanilla extract
• 1/2 banana, diced
• 1 tablespoon walnuts, crushed
• 1 teaspoon tahini, drizzled
• 1 dash almond milk, optional

Method
1. Add cauliflower to a food processor and blitz until forms cauliflower rice.
2. Place almond milk, cauliflower, salt, cinnamon and vanilla into a small saucepan and place on a low heat.
3. Cook, stirring regularly, for ten minutes or until rice is tender and liquid absorbed.
4. Top with banana, walnuts, tahini and more almond milk if desired.

Improvisado y delicioso!
Nunca desheches las porciones pequeñas de vegetales que te queden en la nevera, siempre van bien para el desayuno.
Coliflor, cebollino, kale, aceitunas y tocineta, con medio aguacate 🥑
La tocineta y coliflor las tenía hechas de otro día, así que este plato fue preparado en 5 min, solo eché todo en una sartén con mantequilla, sazoné con S, P y cúrcuma y listo.

Never throw away your leftover veggies, even a very little portion is a great addition to your breakfast.
I had leftover cauliflower, pre made bacon (we made a big batch so not technically leftovers), green onions, kale and black olives. Just threw everything in a pan with butter and seasoned with S, P and turmeric.

Getting more picknick leftovers out of the way: I had some ganache left after covering the cake, so I topped today's smoothie bowl (beet, spinach and coconut) with it, and also added a bit of tigernut flour and the last of the blackberries from my aunt's garden.

Want to know what to do with all that summer squash?

Veggie Egg Nests!

1 yellow summer squash (or another zucchini)
1 zucchini
2 large carrots
4 free-range eggs (for best taste)
1 garlic clove, minced (I've also used chopped garlic scapes)
2 TB coconut oil

1. Grate squash, zucchini and carrots.
2. Add coconut oil to non-stick pan or cast iron skillet (will need a lid). Let melt and add veggies (and garlic!). Cook on medium heat 10-15 minutes, stirring every couple minutes. Stick the lid on intermittently.
3. Make four wells in the veggie hash and crack an egg into each one. Put lid on and wait 5 minutes. The white should be firm to touch and the yolk clouded over. 
Serve immediately with some good sea salt and pepper!
