RECIPE: Peanut Veggetarian STIR-FRY

Ingredients:
-2 cups Cauliflour
-1 and a half cups Broccoli
-1 and a half cups Asparagus
- 1 Bell Pepper
-1 Portobello Mushroom cap
-2 Cloves of Garlic
-2 Tbsp of Peanut Butter
-2 Tbsp of Sunflower Oil (can substitute with Olive Oil)
-2 tsp Sesame Oil
-Lemon Juice

Cooking Tips: -roast the pieces of Cauliflour in the oven at 425° Farenheit for 30-45 minutes and add at the end
-steam the pieces of Broccoli until partially cooked and also add at the very end -cook the rest of the veggies in Sunflour oil
-move veggies to the side of the pan when done, add Sesame oil and Garlic letting it cook for 30 seconds and then stir in with the veggies
-finaly add the peanut butter and stir it in with the veggetables
-finish with a drizzle of Lemon Juice

A while ago I started to eat mainly fish and reduced meat to only chicken, as I always wanted to shift towards a more vegetarian diet. Although I have tried various vegetarian recipes, my husband and I found those dishes always a bit unsatisfying, not to say boring, so it never really sticked and we ended up eating more veggies but always with some fish or chicken.

I was obviously delighted when I saw Jamie Oliver organizing a 5-day Veggie Challenge and we decided that this would be a great opportunity to give veggie meals another shot.

He wanted to inspire everyone - veggies and meat-lovers alike - to embrace the wonderful world of veg, everyday. Jamie says: “Knowing how to make veg and fruit the stars of the show is such an exciting way to cook”. Jamie’s colorful meal plans guaranteed at least five portions of veg and fruit each day, plus a healthy balance of all the main food groups and nutrients.

Well prepared with recipes for an entire week, we did some proper online shopping to stuff our fridge with an unbelievable amount of fresh veggies, and many spices and that we haven't used before. This was the first time we actually tried online shopping too, which resulted not just avoiding to carry home a quite heavy load on veggies but saved some serious money compared to meat dishes.

We cooked every single veggie meal on the challenge and it wasn't just a lot of fun (as my husband also participated cooking at least the dinner meals), but this was the first time that we enjoyed almost every vegetarian meal for an entire week, without any exception of cheating in some meat or fish.
Surprisingly we didn’t miss meat at all and it was overall much easier than I would have expected to cut out meat entirely when replaced with well balanced, colorful veggie meals.
