Today’s beautiful plant-based lunch was a delicious grain bowl w/red quinoa, wild rice, buckwheat, butternut squash, currants, broccoli, mushroom conserva, kale, roasted carrot & ginger dressing. Also a picture of last night’s menu & the breakfast buffet - avocado toasts w/heirloom tomatoes, watercress, fruit salad, carrot/ginger juice, blueberry/date smoothies, farro, & butternut squash. We’re not going hungry on the retreat!!😉😉😉😉

Spinach Squash Soup
The sweetness of delicata squash and the slight bitterness of spinach might be my new favorite fall combo. I owe this to my recent fridge forage, which seems to be my latest source of inspiration.

Inside this cast iron skillet is a sour-cream-dolloped layer of blistered cheese hiding a bean-jeweled, bubbling roasted green tomato sauce with baked eggs. I’m not going to lie. It’s damn good and a riff on a baked ranchero egg dish I made a few years back and shared on the blog. This time around I used some of the roasted green tomato salsa from @furrowandtrowel . A good move all around.

I put one table spoon of water 💧 and some sesame this time to bake banana cake. Then I baked it in oven. I recommend you to put water container in your oven so that the surface of your cake will not be dried and you can bake moist cake without burning your cake too much.
If you don’t have oven at home, you can use a rice cooker or steamer, but please add two table spoon of water when you bake this cake by a rice cooker. This cake is reduced sugar recipe and rich of potassium. You can froze for your breakfast 🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌

Ingredients
For the crust:
8 tablespoons unsalted butter (or vegan butter, which I used)
1/4 cup of granulated sugar
3/4 teaspoon vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour

1 cup granulated sugar
3 tablespoons all-purpose flour
3 large eggs
2 teaspoons finely grated lemon zest
1/2 cup strained fresh lemon juice

Directions
1. Preheat oven to 350º F. Line an 8-inch square baking pan with aluminum foil; allow some to hang over the sides of the pan. Lightly grease the foil.
2. To make the crust: Slice the butter into tablespoon-sized pieces. In a light-colored saucepan over medium heat, melt the butter while stirring constantly. The melted butter will foam a bit, then the foam will subside. Keep cooking the butter until the milk solids turn golden brown and the butter has a nutty fragrance, 7 to 10 minutes. Take the butter off the heat and pour it and all the browned bits from the pan into a heat-safe bowl to cool slightly.
3. When the butter has cooled, add the sugar, vanilla, and salt. Add the flour and mix until just incorporated. Press the dough evenly into the bottom of the prepared pan.
4. Bake the crust for 20 to 25 minutes, until it is golden brown.
5. Meanwhile, make the topping: Stir the sugar and flour together. Whisk in the eggs, followed by the lemon zest and juice.
6. When the crust is done, turn the oven down to 300º F. Slide the oven rack with the pan on it out of the oven and pour the filling into the hot crust. Slide the rack back into the oven and bake until the topping is set and does not jiggle in the center when the pan is tapped, 20 to 25 minutes. Set the pan on a rack and let the bars cool completely in the pan.
7. Lift the cooled bars out of the pan, using the foil as handles. Slice the bars into 16 or 25 squares and dust with confectioners’ sugar just before serving. Store leftover bars in the fridge for up to a week. The crust will soften over time.

My inspiration was @chilis buffalo chicken fajitas! I made buffalo cauliflower tacos with roasted broccoli from @theproducebox. I roasted the cauliflower in olive oil and @hidden.valley ranch seasoning and tossed it in a mix of @franksredhot buffalo sauce and @earthbalance. Served with flour tortillas, blue cheese crumbles, and green onions. Sooo good! #veganrecipes #vegetarianrecipes
