Used @chowhound Basic Vegetable Soup recipe and she picked red bell peppers and corn for the "additional vegetables". Awesome kid dates ending with a healthy meal! ❤️

This Orzo with Roasted Vegetables was amazing! Like "I could eat this every day for dinner" amazing. 💛

For some reason I'm having trouble coming up with several plant based recipes lately...? That's very strange for me. So I have been browsing Pinterest most evenings for some quality recipes.

And this Orzo was one of them! My husband loved it too so it must be a winner 👍😉

I don't want to under-sell the preparedness it takes to eat a plant based diet. And some days, I just don't have the time. So I order pizza...and snack on graham crackers...😆🤔

I'm not perfect AT ALL in the way I eat. All I can do is try my best. So give yourself a break too! We are not machines ❤ .

For the Orzo and Veggies:
👉1/3 C Walnuts
👉1 1/2 C Crimini
👉Mushrooms destemmed and sliced
👉1 C Mix of Red Yellow, or Orange Bell Peppers, deseeded and diced
👉1 lb Zucchini 👉12 oz Cherry Tomatoes cut in 1/2
👉2 tsp Garlic minced
👉1/2 C Shallot chopped (or white onion works!)
👉3 Tbs Olive oil (divided)
👉1/2 tsp Sea Salt
👉1/2 tsp Ground pepper
👉1 C Orzo
👉1 1/2 C Vegetable broth (the Pacific brand is my fav)

For the Dressing:
👉2 Tbs Olive oil
👉1 Tbs Lemon juiced, about 2
👉1/2 tsp Sea Salt
👉1/4 tsp Ground pepper

For the Garnish:
👉2-3 Tbs Chopped Fresh Basil
👉2-3 Tbs Chopped Fresh Parsley

Instructions
Toast the Walnuts:
Preheat Oven to 350F and toast walnuts for 6-7 minutes, or until toasty and fragrant. Set aside.

Roast the Veggies:
Turn oven to 425F (218C). Line two sheet pans with parchment paper. Place the mushrooms, bell peppers, zucchini, tomatoes, garlic and shallot on one pan. Sprinkle with 2 Tbs of olive oil. Using a spatula, mix all the veggies together with the olive oil. Sprinkle with salt and pepper then stir again. Move 1/2 the veggie mixture to the other sheet pan. Spread the veggies in one layer, making sure there's no overlapping on both pans. Roast in 425F oven for 25 minutes.

Make Orzo:
Cook according to package directions using vegetable broth.
Make Dressing:
Mix ingredients together to make dressing.
Add roasted vegetables to orzo.
Stir in dressing.
Sprinkle on garnish.
Add walnuts.
And EAT!!!! 😋

Got a few messages about how to prepare this whole roasted cauliflower and I’m happy to share that it’s not only easy but also super super yummy 🤗 First, clean the cauliflower and cut off all of the stems / leaves. Second, boil a pot of water and place the entire cauliflower in the boiling water for about 5-10 minutes depending on the size. You don’t want it to be over cooked but you want to be able to pierce your fork through the cauliflower 👌🏻 After letting the cauliflower sit for a few minutes, top with avocado 🥑 oil, herbs 🌿 of choice, and roast in the oven at 425 for about 20 minutes! The result is a very moist “cauliflower steak” that can be served in slices 😃 I recommend seasoning it with Italian herbs or curry & cumin 😍 Hope you all had a great Monday ❣️
