Red lentil soup served with greek yogurt and seeds +homemade bread

Ingredients:
1 tbsp olive oil+ 1 tbsp butter
1 large onion
1 large carrot
1 clove garlic
cook stiring until softened and then add spices:

1/2 tsp thyme
1/2 tsp oregano
1/2 tsp black pepper
1/2 tsp curry
1/2 tsp paprika hot/mild
1/2 tsp turmeric
1/2 tsp salt
1/2 tsp ground ginger
add:
2 cups red lentil
8-9 cups hot water
bring to boil and then lower heat and simmer until lentil is cooked, then add:

1 1/2 cups tomato sauce
1 tbsp lemon juice
and simmer for another 10 minutes

greek yogurt+ seeds for serving

Okay, let me explain 😂 The quesadilla was nice on the inside, even though the outside is a tiiiiiny bit burnt 🤦🏻‍♀️ So dinner was a Spanish Pisto and cheese quesadilla with more pisto on the side for dipping and pomegranate to satisfy my sweet tooth after 👍🏻 I haven’t mentioned before, but I have two snacks a day, I just haven’t taken any photos!

I had a toddler meal for lunch w some what of a grown up twist (cos I made it spicy!) 😛 I made @gardein vegan chicken strips and spicy sweet potato fries with sriracha ketchup, 🤤! All I did was slice up the sp into thin wedges, drizzled grape seed oil and garlic salt and red pepper flakes on them. Tossed them around and placed on the same baking sheet as the vegan strips. Cooked as directed on the bag which was (16-20 min on 430F flipping over half way through) they all cooked together and came out delicious! I hadn’t had their chicken strips yet and they definitely did not disappoint! I had been scared to try fake chicken, but I love their products while not being a huge fan of vegan “meat”. #meatlessmeals 🌱

This is my vegan take on a katsu curry inspired by @emma.cather1ne, @tokyopony and @sarahjessicairwin which is super nutritious and balanced! It contains all five of my five a day (the curry sauce is literally just carrot, onion, courgette, and curry powder) and the panko is bound to the aubergine with a flour-water mix. This is a meal I can eat every day and feel good about too!

Цельнозерновой ржаной хлеб на закваске 🍞 🌱 Лайк за рецепт ❤ Сохраняй себе, чтобы не потерять

Ингредиенты:
* ржаная цельнозерновая мука 1 3/4 стакана
* вода (теплая, темп. около 42 градусов) 1 стакан
* семечки льна и тыквы 1/4 стакана
* ржаная закваска 40гр
* соль 1 ч.л.
* семена кориандра

👩🏻‍🍳Как готовить:
1. Достать закваску из холодильника за час до приготовления хлеба. Отложить подальше все металлическое: использовать деревянную, в крайнем случае пластиковую ложку. Тоже самое касается формы для хлеба - использовать стеклянную или керамическую. Закваска и тесто на закваске не должны касаться металла.
2. Смешать закваску с теплой водой, затем добавить муку. Отложить 40гр закваски для будущих хлебов в чистую сухую емкость и прикрыть салфеткой.
3. Добавить в тесто семечки, соль.
4. Выложить тесто в форму, предварительно застелив её бумагой для выпечки. Посыпать сверху кориандром и мукой. Оставить в темном месте (я накрываю хлопковым полотенцем) форму с хлебом и закваску на 6-8 часов для роста. Чем теплее, тем быстрее вырастет наш хлебушек :) 5. Поставить в духовку емкость с водой и разогреть до 230 градусов. Вода должна хорошенько нагреться и поддерживать высокую влажность.
6. Печь хлеб 15 минут при 230 градусах. Не открывая духовку снизить температуру до 200 и печь еще 20-25 минут. Вынуть хлеб из формы и печь еще 20 минут.

Когда хлеб остынет, заверните его в хлопковое полотенце и положите в хлебницу. Такой хлеб на закваске прекрасно храниться неделю и не портится. Но если разрезать хлеб на следующий день, он будет храниться еще дольше.
Хлеб на закваске вообще не портится, ведь в нем нет дрожжей, со временем он просто черствеет и сохнет. А закваску отправляем в холодильник на максимум неделю, не закрывая банку плотно крышкой, или проделав в крышке дырочки для того, чтобы закваска "дышала" :)
