My unpretty bowl of chili is doin the job for meatless monday dinner tonight! This vegetarian chili is so hearty that you dont miss the meat at all! .
In my chili:
- 1 can of diced tomatos (you need all the liquid from the canned tomato)
- 1 cup of sweet potatos
-2 diced carrots
-2 diced celery
- 1 can of black beans
- 1 can of mixed beans (my included haricots, black eye peas, chick peas)
- 1 chopped portobello mushroom
-1 whole onion chopped - 1 diced zucchini -1/2 cup of tomato sauce - 4 tbsp of chili powder
- 1 tbsp of cumin
- 1 tsp of turmeric
-1 tsp of saffron
-1 tsp of cayenne pepper. .
Grab your dutch oven pan and sautee all the veggies first in olive oil first, then add in canned tomatos and sauce and spices. Simmer simmer simmer, and serve with all the good ol toppings!
