Good morning! It has been 7 months since I joined the gym for the first time. I'm doing #bodypump #yoga and #intervaltraining As well as walking everywhere. I eat mostly raw #vegan and I don't eat any supplements. I realise that my transformation might take longer the natural way but I'm convinced that it will be healthier and more sustainable. After all, it's not just about aesthetics. I want to prove that vegans can build muscles. If I had a Euro for every time someone asked me: 'where do you get your protein form?' I'd be a millionaire. #vegetableprotein is in everything I consume. No animal needs to suffer for my vanity. After having been on vacation a few weeks ago and with life being so busy, I haven't had the time to really meal prep anything exciting. So this weekend I was so happy to finally have some time to make something insta worthy! 😜 I made a teriyaki stir fry with carrots, brocolli, sautéed mushrooms, tofu, and black bean noodles. To make the tofu I baked it at 400 F for about 40 min, flipping the cubes half way through. I loved using the black bean noodles for some extra protein! I got them at Costco and they are my go to when I'm wanting noodles without the extra carbs. They have tons of protein with 11 g of protein per serving! I made my own teriyaki sauce using a recipe by @candicelynnfitvegan and it turned out great 😀. Recipe for the sauce is below. It serves 2-3 people so multiply or divide as you wish.

Teriyaki Sauce Ingredients:
🌱2 tsp chili paste
🌱2 tsp rice wine vinegar
🌱1/4 cup coconut aminos
🌱1 tsp tahini
🌱2 tbsp maple syrup
🌱2 cloves garlic
🌱1 tbsp grated ginger

🌱 Sprouted Quinoa 🌱 First time I have dried this. It is so easy. Wash the quinoa thoroughly in filtered water. Decant into kilner jar and add a sprouting lid (didn't know these were a 'thing' so I didn't have these in the kitchen, I improvised with a muslin fastened on with killer screw top), or you can invest in a sprouter tray. Turn it upside down sat in a bowl to collect any surplus water. Rinse again after 6/7 hours and and put back in the kilner. Little sprouts shout appear in 1/2 days. I rinsed a second time on Day 1. Leave out of direct sunlight.
Sprouting removes the growth inhibitors contained in the grain and makes the starch more digestible. It also increases the bioavailability of certain nutrients.
Quinoa can then be cooked in the usual way but will most likely need reduced cooking time. Try it in salads, in sandwiches or added to soups.
