Making your meals colorful is a great strategy to increase the variety in your diet. And that doesn't mean you need to cook complicated items! It can be as simple as our #Colorful Broccoli Salad.
Here is the recipe: Cut 1 head #broccoli into pieces and cook al dente. Boil 2 eggs to your preference. Remove the shells and cut each egg into 4 pieces. Rinse and cut the tomatoes into bite-size pieces. On a plate, assemble broccoli pieces, eggs, and tomatoes. Sprinkle with roasted pumpkin seeds and enjoy it with your favorite salad dressing (or you can make your own dressing- we made ours with Greek #yogurt, lemon juice, olive oil, white wine vinegar, honey and some salt and pepper)!
