Vegan Victoria sponge (recipe from Tesco.com) was a huge success. Tasted fantastic. The texture is not the same as a cake made with egg - it was more like a steamed pudding sponge consistency (like sticky toffee pudding). The filling was whipped up coconut cream with maple syrup, vanilla, icing sugar and chopped strawberries. Plus a scoop of vegan ice cream. Yum!
