BANANA ORANGE BREAD
Do you need some inspiration to make something special for the weekend? This bread is super yummy, perfect for breakfast, snack in between or for teatime. HEALTHY, FLUFFY, MOIST & SUPER DELICIOUS. Try it yourself and serve with nut butter, jam or cinnamon
INGREDIENTS • 2 flax eggs (2 tbsp + 6 tbsp warm water) • 2 tbsp brown sugar • 2 big orange • 1 grated carrots • 2 medium banana • 2 medium bananas • 2 cup gluten-free flour • 1 tsp baking powder • ¼ tsp salt • 1 tsp vanilla extract • 1 tsp cinnamon • ¼ cup finely chopped walnuts (optional)
1 Combine grounded flaxseeds and warm water, allow to sit for about 5 minutes.
2 Finely grate the zest of one orange on to a plate and set aside, then squeeze the orange.
3 In a large bowl whisk the flax eggs and sugar and the grated carrots and orange zest.
4 Mash the banana with a fork and add it to the mix.
5 Add the flour, baking soda, salt, vanilla extract, cinnamon and whisk until completely blended.
6 Finally add the orange juice and the walnuts.
7 Preheat the oven to 180ºC.
8 Bake in the middle of the oven for 45 minutes.
9 Remove the cake from the oven and leave it to cool in the tin for 10 minutes.
