Happy Monday peeps!

Cauliflower, sweet potato and soya nuggets Unwich

1large head of cauliflower florets lightly steamed
1/2 cup soya mince
2 steamed sweet potatoes
1 red chilli
1 jalapeno pepper
1 flax egg
1.5 tsp all purpose seasoning
Juice of 1/2 a lime
1 tsp each of coriander powder, cumin seeds and chilli powder
1 tbsp soya sauce
Coriander leaves
1 tbsp garlic powder or minced garlic
1/2 tsp minced ginger
Mozzarella cheese (optional)
1tsp each of roasted watermelon and sunflower seeds

Cook soya as per instructions. Combine all ingredients (except the soya) in a food processor until you reach a rice consistency. Mix in soya and form into cutlets/nuggets. Bake in the oven or cook in a non stick pan until golden brown.

Serve between two lettuce leaves along with tomatoes, onions, dressings of choice and crumbled cheese.

Rosemary Pizza

Gluten-free, vegan, oil-free and of course delish!

I used finger millet flour for the pizza base.
The tomato sauce requires nothing more than cooking down 4 large diced tomatoes with dry herbs, lots of fresh rosemary, garlic cloves, salt and pepper and (you want to get to a a smooth consistency where the tomatoes have broken down completely.) Use whatever vegetables are in season as toppings and finish off with some cashew cheese and rosemary sprigs.
Bake for 15-20 mins at 170°c

All my life, the only green tomato based dish I’ve eaten is Rava Dosa and Tomato Kayi Gojju that my mom makes. It’s the most amazing combination and the only meal that even comes to my mind when I see Tomato Kayi anywhere! This time around though, I wanted to try something different with them (simply because I was feeling too lazy to pressure cook dal for the gojju and make the rava dosa). I looked for recipes online and among some not-so-interesting chutneys, this one for the North Karnataka style Tomato Kayi Ennegayi caught my attention.

The original recipe called for roasted peanut powder, niger seed powder, North Karnataka masala and whatnot. Instead of making all those things, I decided to improvise with what I had on hand. The result was sccrrruuummmptious! 🤤😋 Yes, laziness and resorting to shortcuts does pay off children. Let that be a lesson to you. 😁 Swipe left to see the finished product and drool.
