Savory veggie hash is my favorite go to breakfast these days 😋 I cook up a mix of whatever veggies and greens are on hand in a cast-iron skillet till they're crispy and delicious, and then top with a hefty portion of avocado and sauerkraut 🙌
Here is one of my favorite combinations:
1-2 tb of your favorite cooking oil (I like coconut or avocado)
1/2 onion, diced
1 medium sweet potato, sliced into matchsticks
1 c sliced mushrooms
1/2 c shaved Brussels sprouts
1/2 bunch chopped kale, a few handfuls of spinach, or whatever greens you like
optional seasonings: 1 tsp minced garlic, 1/2 tsp cumin powder, coriander powder, paprika, or dried oregano
1/2 tsp salt, or to taste
Using a cast-iron or any heavy bottomed skillet, sauté the onion over medium-high heat until it becomes translucent. Add in the sweet potato, and cook for about 5-7 minutes until it softens. You may need to add a tablespoon or two of water to help it cook, depending on the size of your cuts.
Add in the mushrooms and Brussels, and cook for another five minutes or so. Add salt, garlic, and any other desired seasonings.
Either add in your greens now (if using heartier greens like kale or collards), and cook for a few minutes, or mix them in at the end of cooking for lighter greens (like baby spinach or chard). Plate your hash, and top with sliced avocado, a scoop of sauerkraut, a dollop of hummus, or whatever else you may desire. And dig in!
