VEGAN FOOD ALERT!
I realize some people have a knee jerk reaction to a vegan diet, like it somehow threatens their choices. Its just an option, one that has become effective for me on many levels. Its improved my health and appearance, and its a positive change both ethically and environmentally. I get a lot of questions about it, so i figured I'd post my regular meals in an attempt to encourage others to consider it. Cutting animal products from one meal at a time was the most effective path for me. The body needs time to adjust to a new diet. Even if you only switch one meal a day to vegan, that's huge and worth the effort.
This is my daily breakfast bowl. Your quantities will vary with caloric needs. Keep in mind you will need more volume because the food is less dense:
1. Arugula, couple handfuls
2. 1/2 pink lady apple, diced
3. 1/4 avocado, diced
4. 1/4 lemon, squeezed over
5. 1 medium sweet potato, pan fried in a cast iron skillet w/avocado oil (drizzle w/maple syrup if you want it extra sweet)
6. 3/4 cup fresh saurkraut
7. 1 cup seasonal berries
8. 2 tbsp raw hemp seeds
