VEGAN CAESAR SALAD from @sainsburys
Ingredients

For the salad
400g can chickpeas, drained and rinsed
4 tsp olive oil
1 clove garlic, peeled and sliced in half
2 slices bread
1 sprig rosemary, leaves only
500g kale, trimmed of stalks
½ lemon, juiced

For the dressing
1 clove garlic, roasted as part of a bulb
250ml soya milk
50g nutritional yeast
20ml apple cider vinegar
300ml sunflower oil

Method
1. Preheat the oven to 190°C/gas mark 5. Put the chickpeas in a high-sided roasting tin and drizzle with 3 tsp olive oil. Season, then roast for 15-20 minutes, until crunchy and golden.
2. Rub the cut side of the garlic clove all over the bread slices. Slice into chunks, place on a baking tray and sprinkle with the rosemary. Bake in the oven below the chickpeas for 15-20 minutes.
3. Put the kale in a large bowl, drizzle with the remaining olive oil and add the lemon juice. Massage the leaves with the juice for 10 minutes until the leaves have turned dark green and tender.
4. Blend the garlic, soya milk, yeast and vinegar together until well combined. Add the oil, little by little, until the dressing is thick and emulsified.
5. To serve, mix the kale with two-thirds of the dressing, then top with the roast chickpeas and bread croutons.

Ripeto... senza limiti. Le bevande e i dolci sono esclusi... ma poi, chi ha bisogno dei dolci quando hai mangiato talmente tanto che stai per scoppiare?! 😂 Adoro i ristoranti con questa formula, perché oltre al fatto che posso dare libero sfogo alla mia parte un po' 🐷, si può assaggiare tante cose diverse. Infatti come puoi vedere dal piatto numero 1 (ce ne sono stati altri 3 dopo 🙊😅), ho preso un assaggio di tante cose diverse! E devo dire che nel complesso era tutto buono, quindi se passi per il Portogallo e hai un languorino... direi che questo è il posto giusto! 😋🇵🇹 Un'altra cosa bella di questo posto è che puoi mangiare seduto su un'altalena! 🌙

Got invited to a raw vegan desert cooking class, were they showed how to make a raw zebra cake 🍰 and raw food chocolate tryffels 🍫.
Afterwords we got to try some of there delicious vegan and raw vegan meals, juices and smoothies.
It was a fantastic vibrant afternoon at @sayuri_healing_food wonderful souls, fresh delicious food in a cozy atmosphere 🙏.

Moderation--how I get through life.
Lately I've been training for a 10K trail run, which means I've been running 4-5 days a week, trying to cut back on unhealthy food, and have seen the changes almost immediately....and then I went to the @ncstatefair 😖

You know what though? I walked almost 4 miles, and looking back, while I definitely had too much fried food, it could have been worse. #moderation
Today it's back to the grind, and I'll have my #vegansalad for lunch and a 4.5 mile run after work. #dowhatmakesyouhappy ☺️☺️☺️☺️☺️☺️☺️☺️

Tastes like dessert, looks like a smoothie and have ALL THE BENEFITS OF A SALAD!!

Let me explain everything what’s inside so you can all understand what I’m talking about and why this is soooooo good, fast, convenient and most importantly good for your health!

Not every day you have the time to chop a salad....neither to eat it (let’s face it - salads have lots of VOLUME hence require more time spent eating it!). Also I don’t crave salads 3 times a day... or even every day. But still I want to have a variety of vegetables in my diet! 🌽🥕🥒🍆🍅🥑
This SALAD SMOOTHIE works very well for me! Try it and maybe you are going to like it as well!!

INGREDIENTS👇🏼
🔸 KIWI - high in vit C, fiber, digestion help, minerals, alkaline (⬇️ acidity)
🔸 BROCCOLI - vit C, K, potassium, fiber, lower rates of cancer
🔸 ASPARAGUS - natural diuretic, full of antioxidants - vit E (skin, immune system)
🔸 CUCUMBER - potassium, magnesium, silica (connective tissue strength), reduces risks of kidney stones, helps lower blood pressure
🔸 AVOCADO - great source of omega-3, vit C, E, K, B-6
🔸 BEET ROOT POWDER - lowers LDL cholesterol, antioxidants, supports liver detoxification, anti-inflammatory.
I got this powder because it’s very convenient and has all the benefits kept in it!
🔸 COCOA POWDER - iron (red blood cells), magnesium (energy, heart health), zinc (supports immune system), antioxidants prevents inflammation
🔸 CHOCOLATE PROTEIN POWDER - well here we all know - retaining and building our precious muscles 💪🏼
I would use plant based powder if I had. This one was whey.
