These are baked "ripe" peaches (pink inside 😍) with crumble topping 😍 Honestly guys one of the best thing I ever eat! First of all sweet baked peaches taste soooo good 😍 second of all with crunchy crumble topping it's "heaven in your mouth" 🙈👼😍 I wish I could send these for all of you! 🙈😍 Happy Thrusday Everyone! 🌸

Today I made this Fresh basil and pomegranate cous cous salad. Very sweet and juicy!

Large handful of pomegranate seeds
Large courgette (chopped into 1 cm cubes)
Large Red Pepper (chopped into 1 cm squares)
½ Small red Onion (chopped into small squares)
2 Cloves of garlic
2 TBSP Cooking oil

1.5 cups Couscous 
2 cups water
1 TBSP vegan spread
1 TSP salt

Dressing:
2 TBSP Olive Oil
Zest & juice of ½ Lime
Small handful basil leaves (roughly torn)
½ unrefined sugar
Salt & Pepper

Method:
Heat cooking oil in large pan or wok.
Add onion and cook on gentle heat for 2 mins.
Add red peppers, cook on gentle heat for 10 mins, stirring often.
Add courgette, cook on gentle heat for a further 10 mins, stirring often.
Check vegetables are really soft.
Add garlic and cook for 1 min.
Season with salt & pepper and set aside to cool.
Prepare couscous; Heat water, vegan spread & salt.
When boiling remove from heat, add couscous, stir and add lid.
Leave for 5 mins.
After 5 mins, fluff with folk and set aside to cool.
Make dress; whisk together all ingredients.
Cool and chill all ingredients.
In a large bowl combine couscous, cooked vegetables and pomegranate seeds.
Add dressing and mix well to combine.
Taste and season if necessary.

New salad: marinated creamy raw broccoli, white cabbage and kale, on a base of garlicky hummus, topped with grilled lemon chilli courgettes, roasted almonds, fresh grapes and a sprinkle of nutritional yeast flakes. It's my favourite! 😊

15-MINUTE SALAD WRAPS WITH THE BEST CASHEW-CILANTRO-SAUCE by @heavenlynnhealthy

INGREDIENTS

FOR THE CASHEW-CILANTRO-SAUCE:

1 garlic clove
1 cup of cilantro
1/4 cup (60ml) of extra-virgin olive oil
2 tablespoons of white vinegar such as apple cider vinegar or white balsamic vinegar
1/2 cup (50g) of cashews
3 tablespoons of honey
1/2 teaspoon of turmeric
1/2 teaspoon of cumin
the juice of 1/2 lime
FOR THE SALAD WRAPS:

10 large lettuce leaves
600g of vegetables of your choice: I used 1/2 cucumber, red bell pepper, 1 avocado, 4 radishes, 2 bok choy
1 1/3 cups (200g) of plant-based protein such as edamame, chickpeas, lentils, beans or GMO-free tofu
1/2 pack of rice noodles, preferably brown rice noodles if you can find them
INSTRUCTIONS

FOR THE SAUCE:

Mix all ingredients in a blender or food processor until an almost smooth paste forms. Alternatively, you can also finely chop the cashews and coriander and mix it with the other ingredients per hand.
FOR THE SALAD WRAPS:

Cover the rice noodles in boiling water and let soak for 10 minutes. Drain the water and set the noodles aside.
Wash and dry the vegetables, and cut them into 2 to 3 inch sticks. Place the frozen edamame in a pot of boiling water for 3 – 5 minutes to defrost.
To assemble, simply place one salad leave on a plate and add rice noodles, vegetables and edamame and sprinkle with a generous amount of the sauce.

#lunch in Costaaaaaa was a soy cappuccino & a Moroccan cous cous salad from boots meal deal 🙌🏻 as far as meal deals go this salad is actually pretty decent, the veggies always taste fresh (even though the lettuce is a lil sad looking 😂) saw my gran this morning for her birthday which was really nice now heading home and later I'm going for a night out with my friends 💃🏼 finally have a social life for once 😅💗

On the way to Berlin (running a half marathon tomorrow - the first real test in preparation of the Frankfurt marathon - and then exploring the city for a few days), I share some pictures of the past few days' meals:
