My impromptu crustless sweet potato pie that I started last night. I only had one baked sweet potato left over from my veggie burger prep and decided to experiment. The crust is a mixture of ground sunflower seeds, shredded coconut, hempseed, rolled oats & coconut sugar. The filling is soooo good and super simple. One medium/large sweet potato, vanilla cashew milk, light brown sugar, vanilla & lemon extract and organic cornstarch.
