A bit of a throw back! Just saying hi and to remind you of this Thanksgiving Buddha bowl, with quinoa, arugula, roasted veggies and red onion, chickpeas and cranberries topped with a warm tahini dressing! ✨✨✨✨✨✨✨✨✨✨✨✨✨✨✨🤩
Fill bowl with a handful of arugula, 1/4 cup cooked quinoa, top with the roasted thangs, (Brussel sprouts, cauliflower, sweet potato, red onion, fresh cranberries and chickpeas tossed in olive oil, sage, thyme , sea salt and pepper bake on 425 for 25-30 minutes. Giving the pan a good shake halfway through) drizzle with the dressing. 😋

1/4 cup tahini
2 tbsp maple syrup
2 Tbsp white balsamic vinegar or champagne vinegar
1 tbsp Dijon mustard
1/4 water
1 tbsp olive oil
1/2 tsp sea salt
Freshly ground pepper
Bring all ingredients to a gentle summer in a small sauce pan, add more water to thin it out, salt to taste. Happy Monday! .

Butternut squash Mac n cheese.
The sauce: -Pre-soak cashews over night. (I’ve found 30 mins also works well)
-Carefully cut squash in half, rub in olive oil and put in oven at 400 degrees for 30-35 mins or until the inside is tender. -chop five cloves of garlic and half of an onion cover them with 1/4 cup of veggie stock.
-simmer until most (not all) of the stock is gone.
-Add cashews and 1 and 1/2 cups of water to the blender.
-Add the sautéed onions and garlic to blender.
-Scoop out the insides of the squash and add to blender also. - 1teaspoon of tahini
-2 tablespoons of miso
-1/4 cup nutritional yeast
-1 tablespoon of salt
-1 teaspoon of garlic salt
-2 teaspoons of paprika
- pepper to taste -blend smooth and add to pasta (this one is veggie pasta)

If the squash is too sweet for you (like it was for me) add more nutritional yeast and black pepper to adjust.
For even more yums, add veggies and bake in over for 15 mins on 380. Add Japanese panko breadcrumbs for a crunch!

Fry in olive oil and crushed garlic and fry 1 chopped red onion. Add chopped tomatoes and courgette. Add cooked pasta(I use lentil pasta) with passata and some brown sugar, salt and pepper to taste
