Il problema Ăš che pretendiamo molto da noi stessi, e alcune volte avremmo bisogno di pause. A un certo punto perĂČ il corpo non segue piĂč il ritmo incessante della menta, va in tilt. Ecco da una settimana il mio corpo Ăš andato in tilt, bruttissima sinusite. Stanotte con la febbre, la mia mente pensava a cosa preparare per pranzo: lasagne, crepes, vellutate, biscotti e muffins. Stamattina, invece, il mio corpo ha chiesto riposo e per la prima volta sono riuscita ad ascoltarlo. La mia dolce metĂ  ha preparato questa crema di zucca e castagne.
Ingredienti:
1 zucca tagliata a cubetti di medie dimensioni
1/2 cipolla tagliata a mezzaluna
4 cucchiai olio
1 rametto di rosmarino
5 castagne cotte a vapore e sbucciate
Brodo vegetale o acqua q.b.
Sale
Procedimento:
Fare un soffritto leggero con olio, cipolla, un pizzico di sale e aggiungete un cucchiaino di acqua per non far bruciare il tutto. Fate appassire per 10 minuti, poi aggiungete la zucca pulita e tagliata. Fate insaporire mescolando nel soffritto per qualche secondo. Aggiungete acqua calda o brodo caldo, per regolarvi con la quantitĂ  non dovete superare la metĂ  del zucca. Incorporate il rosmarino e il sale e coprite con il coperchio. Lasciate cuocere a fuoco basso per almeno 25 minute. Se avete tempo fate cuocere a lungo. Le cotture lunghe sono molto indicate in questa stagione e donano energia al corpo. A cottura terminata frullate e servite con le castegne triturate.

Today I have something new to present: selfmade rhubarb compote😍 of course this one is #vegan and made with regional rhubarbđŸ‘ŒđŸ» super easy and fast prepared and you can also make a lot of it and store it for a long time to eat it throughout the whole year!!! I love topping my #porridge or my #veganricepudding with it. So easy peasy 2 ingredients for you: fresh rhubarb and cane sugar. YES you won’t need any water for this recipe so you will get all the taste of the rhubarbđŸ€€đŸ€€
Peel the rhubarb (if necessary) and cut it in small pieces. Place it in a big pot and add the cane sugar. Stir and let it sit for at least one hour. You will notice that the liquid of the rhubarb came out. Now you can heat up your mixture and cook it until the compote has the right consistencyđŸ€— put it in a glas (airtight closed) and eat the rest right away😃 hope you will enjoy it as much as I do!!💞

🩃 Turkey Free Vegan Veggie Roast! đŸ„•

1Πcup vegetable broth
2 tablespoons soy sauce
2 tablespoons olive oil
4 cloves garlic, minced
1 cup cooked chickpeas
2 cups vital wheat gluten
Πcup nutritional yeast
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
1 teaspoon onion powder
1 teaspoon smoked paprika
1 tablespoon seasoned vegan breadcrumbs
⅓ cup vegetable broth (for roasting pan)
Assorted vegetables, cut (for roasting pan)
œ teaspoon turkey rub or poultry seasoning

Heat the oven to 350 F.
In a blender, combine liquid ingredients and chickpeas and blend.
Combine liquid and dry ingredients (including breadcrumbs) and knead for 1 to 2 minutes.
Form into loaf.
Grease foil with cooking spray or oil and wrap loaf in foil like a Tootsie Roll, twisting the ends to create a seal.
Place loaf in a roasting pan.
Bake for 1 hour, rotating every 20 minutes. Uncover and discard foil.
Rub with poultry seasoning (and oil, if desired). Add remaining broth and vegetables and bake for another 30 to 45 minutes
