I recently made an accidental discovery about NYC's ramen restaurants that left me devastated and depressed. Which is why tonight I am eating ramen's close cousin, soba noodles, to prove to myself that I AM FINE without ramen in my life. I'M OVER IT. Not upset at all.

INGREDIENTS
1/2c tahini
1/2c maple syrup
1tsp vanilla extract
3tbsp coconut oil, softened
3/4c coconut flour
1/2c gf oats
1/2tsp pink Himalayan salt
1/2tsp baking soda
1c (or more or less, whatever!) vegan chocolate chips

METHOD:
Set oven to 375F and line a cookie sheet with parchment paper.
โ€ข
Mix together the wet ingredients and then mix in the dry ingredients.
โ€ข
Add chocolate chips last and fold into the dough.
โ€ข
Spoon out tablespoon sized portions and roll into balls and flatten a bit to get a better "cookie shape".
โ€ข
Bake for 10-12 minutes. Let cool on the cookie sheet for about five to ten minutes before removing to cool further on cooling rack.

Then try your best not to eat them all at once because they're SO GOOOOD!

yields 12-16 cookies depending on size and how much dough is eaten in the process ๐Ÿ˜›

๐Ÿ‘ PASTA SALAD WITH BASIL-CASHEW CREAM ๐Ÿ“ท by @voilasassi ๐Ÿšจ๐ŸšจRecipe:
INGREDIENTS
350g gluten free pasta
300g fresh basil
100g pine nuts
150g cashews, pre soaked in water von at least 3 hours
3 cloves of garlic olive oil to cover them
80ml water
10-12 sun dried tomatoes in oil ( one glass should work)
salt and pepper to season
optional :
more basil to garnish
cashew parmesan
DIRECTIONS
STEP 1
Bring water to a boil and cook noodles and preheat oven to 200 C.
STEP 2
Meanwhile peel garlic and put the cloves in a small baking dish, covering it up with olive oil.
STEP 3
Roast garlic cloves in the oven until they are golden (takes about 10-15 min but you need to check on it from time to time because every oven is a bit different)
STEP 4
While garlic is roasting, heat up a pan on high heat and add pine nuts. Roast until slightly golden. Set aside.
STEP 5
Once garlic is ready, add it together with the olive oil to a highspeed blender together with the cashews, basil and water.
STEP 6
Blend until creamy and smooth.
STEP 7
Pour basil-cashew sauce to a big bowl and add noodles and all other ingredients. Season with salt and pepper and garnish with more basil and cashew parmesan.

I can't stress this enough because it is so important. ๐Ÿ™๐Ÿผ
I used to be addicted to chips. I could eats whole bag of chips in one sitting and I would eat at least two bags a week. ๐Ÿ™†๐Ÿผ
And then I went on one of those stupid low carb diets and chips obviously weren't allowed. And afterwards there was a high carb diet and guess what chips weren't allowed either. So all in all I haven't had chips in over three years and they became a fear food for me. ๐Ÿ™…๐Ÿผ
And up until recently I used to feel extremely guilty after eating chips which are obviously not nutritious at all and just a lot of empty calories. But you know what I just don't care anymore. If I want chips I will eat chips. And I still have a problem to stop eating them once I opened up a package (which is exactly what the industry wants so good job with your addictive ingredients) but I won't feel guilty anymore. I'm so over restricting and feeling guilty for eating oil, fried foods ๐ŸŸ, chocolate ๐Ÿซ, candy ๐Ÿฌ, chips, refined sugar, gluten ๐Ÿž and so on. There is this insane never ending list of stuff that's bad for you. And yes I agree processed food isn't good for you and you should eat as much fresh, raw, wholesome food as possible but you should not feel guilty about eating all the other food out there! Eating some chips every now and again is not gonna make you fast or unhealthy. Just like eating a salad once a month won't make you healthy or skinny. ๐Ÿ™๐Ÿผ
The only thing you should feel guilty about is eating animal products because beautiful living creatures are being killed and/or tortured for that! ๐Ÿท๐Ÿฎ๐Ÿฃ
