SWEET POTATO TIKKA MASALA
sometimes I like to do a wrap with fresh veggies and a heated leftover dish like this one. -

Recipe;
1 sweet potato diced
2 tsp cinnamon
1 tsp; cayenne pepper, cumin, coriander
Salt and pepper
Oil -
Mix everything and bake in oven until tender. -

Sauce;
Oil for frying
100 ml cashews
250 ml water
1 fresh chili
2 cloves of garlic
1 tsp paprika
1 tsp cumin
0,5 can of diced tomatoes, blended
Salt and pepper -
Blend water and cashews until a smooth consistency.
Heat oil in saucepan, press garlic and fry. Finely chop the chili and fry with the spices and garlic. Then add tomatoes and cashew mixture and simmer.
Add the sweet potato cubes and serve with fresh coriander.

Literally lmk what’s better than soup and pasta. In a nutshell, ramen is my favorite food group at the moment. I usually get chicken-based broth, but Charlie Was a Sinner is vegan so I obvi had to try the vegan ramen and I was not disappointed. Fantastic mushroom action.

Here’s some lovey buccatini and meatballs... but here’s a secret... it’s completely vegan and plant based! Honestly, coming from an avid meat-eater, it was a very close comparison.

3 EASY VEGGIE FRIES by @bosh.tv 🍟
Full Recipe:
Cajun Sweet Potato Fries
2 medium sweet potatoes
1 tsp Cajun spice mix
½ tsp sea salt
¼ tsp pepper
½ tsp garlic powder
1 ½ tbsp olive oil
Vegan sour cream with cajun spice dusted on top (to serve)
Curry Potato Fries
3 medium sized potatoes
1 tsp garam masala
½ tsp ground coriander
½ tsp turmeric
½ tsp sea salt
¼ tsp black pepper
¼ tsp chilli flakes
½ tsp garlic powder
1 tbsp rapeseed oil
Mango chutney (to serve)
Panko Carrot Fries
2 medium carrots (peeled)
2 tbsp rapeseed oil
½ tsp garlic powder
½ sea salt
½ tsp chilli flakes
1 tsp nutritional yeast
100ml almond milk
50g flour
Panko bread crumbs
Basil Mayo (to serve)

Cut the veg into fries and set to one side.
2.
Add the oil and the seasoning to a mixing bowl and stir everything together.
3.
Pour the fries into the bowl and mix them round, making sure they’re well covered in the flavoured oil.
4.
Place a cooling mesh over a baking tray and add the fries with space between them.
5.
Place the baking tray in the oven and bake for 20 minutes at 180’C.
6.
Take the tray out of the oven, turn the fries over and put them back in the oven for a further 20 minutes until they’re nice and crispy.
7.
For the panko carrot fries do all the steps up until laying the fries on a baking sheet. Set out the flour, almond milk and panko bread crumbs into three different bowls, ready to roll the carrot fries in.
8.
First, dip the fry in the flour making sure it’s well covered. Then place the fry in the almond milk briefly before rolling in the breadcrumbs.
9.
Carry out this step for each fry then place on a baking tray for 40 minutes at 180’C. Flip halfway through and cook until nice and crispy.
