SWEET POTATO TIKKA MASALA
sometimes I like to do a wrap with fresh veggies and a heated leftover dish like this one. -
1 sweet potato diced
2 tsp cinnamon
1 tsp; cayenne pepper, cumin, coriander
Salt and pepper
Mix everything and bake in oven until tender. -
Oil for frying
100 ml cashews
250 ml water
1 fresh chili
2 cloves of garlic
1 tsp paprika
1 tsp cumin
0,5 can of diced tomatoes, blended
Salt and pepper -
Blend water and cashews until a smooth consistency.
Heat oil in saucepan, press garlic and fry. Finely chop the chili and fry with the spices and garlic. Then add tomatoes and cashew mixture and simmer.
Add the sweet potato cubes and serve with fresh coriander.
