Have you read @grubstreet’s latest article about all things #vegan? As a curious omnivore it was such a interesting read, and had some great NYC spots listed. Reading about Carrot as meat substitutes and liquid smoke reminded me of the vegan smoked carrot sliders from @66smokehouse Bourbon, Brews, and BBQ event a few weeks ago. Anyway, check out that article if you’re curious about the vegan world like I sometimes am.

Vegan Pulled Pork Sandwiches 🍃

INGREDIENTS
_
2 tablespoons olive oil

1 medium onion, sliced

3 cloves garlic, minced

3 cups jackfruit, either fresh or canned

2 teaspoons salt

1 teaspoon pepper

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon cayenne pepper

1 teaspoon vegan Worcestershire sauce

1 teaspoon liquid smoke

2 cups vegetable stock

½ cup vegan barbecue sauce

FOR SERVING

6 vegan buns

Vegan coleslaw

PREPARATION
_
1. Preheat your oven to 350ºF/180ºC.
_
2. If using fresh jackfruit, line your work surface with plastic wrap.
_
3. Oil a large knife and cut the jackfruit in half, then into quarters.
_
4. Carefully remove the core of the jackfruit by cutting into it at an angle.
_
5. Pull each fruit out and remove its seeds and outer coating.
_
6. Rinse the fruit thoroughly.
_
7. Heat the oil over medium heat in a large pan or Dutch oven.
_
8. Add the onions and garlic, and cook until translucent.
_
9. Add the jackfruit, spices, Worcestershire, and liquid smoke. Stir to coat evenly.
_
10. Add the vegetable stock and bring to a simmer. Reduce heat, cover, and simmer for 45 minutes, until the liquid is mostly absorbed and the fruit has broken down.
_
11. Spread the jackfruit on a prepared baking sheet and bake at 350ºF/180ºC for 45 minutes, until the liquid has baked out and the jackfruit has a deeper brown color.
_
12. Pour the barbecue sauce over the jackfruit, mix, and return to the oven for 15 minutes.
_
13. Serve warm on vegan buns with vegan coleslaw.

FOOD TREND ALERT: Winter burgers are here. And this one’s vegan.

INGREDIENTS
1 celeriac, peeled and cut in half
1 tbsp olive oil
4 bread rolls

FOR THE VEGAN BARBEQUE SAUCE
400g passata
4 tbsp light agave
3 tbsp reduced salt soy sauce
2 tbsp molasses
2 tbsp apple cider vinegar
1 tbsp tomato puree
1 tbsp olive oil
2 tsp smoked paprika
1 tsp dried oregano
1 tsp chilli powder
2 garlic cloves, minced
½ tsp ground cumin
2 tsp tabasco

FOR THE AVOCADO SLAW
½ avocado
½ lime, juiced
1 tsp white wine vinegar
1 tbsp coriander
50g white cabbage, finely shredded
50g red cabbage, finely shredded
1 medium carrot, peeled and julienned

METHOD
1. Preheat the oven to 180°C/fan 160°C/gas mark 5. Place the celeriac on a medium baking tray with a lip and drizzle with the oil. Rub seasoning all over, then cover in foil. Bake for 20 minutes.
2. Meanwhile, mix together all the barbecue sauce ingredients. Remove the celeriac from the oven and pour over half the sauce. Cover again with the foil and place back in the oven for 1 hour.
3. Remove from the oven and gently pull apart with two forks. Ladle over a little more of the sauce and cover again. Bake for a further 30 minutes. Remove from the oven, pull again, ladle over a little more sauce and bake for a final 30 minutes. Pull again and gently stir together, scrapping in the dark sticky edges. Leave to cool slightly before serving.
4. Meanwhile, add the avocado, lime juice, white wine vinegar and 4 tbsp water to a mini food processor. Blitz until smooth. Add the coriander and season well, then briefly blitz again. Add the cabbage and carrots to a medium bowl and pour over the avo dressing. Toss together until completely coated.
5. When ready to serve, layer the coleslaw and celeriac between the bread rolls.

After being vegetarian for 6 months I decided to go vegan at the start of the year. Many reason which include, not wanting a part in the meat and dairy industry, I love animals, animals are sentient beings, they feel pain and emotions like humans, vegan food is way better, after 11 months I've never been healthier, I eat conscious free. I'm not here to debate with anyone there choices of what they eat, simply stating my last 11 months and the graph attached to this post. All that water saved when our planet needs it the most, forests are in detrimental bad health through deforestation, 330 animals saved!!!! All those grains, and freshening the air for us all.
I don't think people realise how much meat production destroys the planet. Though in saying that the meat factory's do, they had stated many of times meat consumption is not sustainable, the main meat supplier in the US, had bought out a major Vegan supplier, whether it's for the right reasons or not, it still saves animals. Vegan isn't a fad, it's been around for a long time, Leo Tolstoy was a major advocate for animals. Now a billion dollar industry.
Anyway, I swayed from my original post. Stoked with those numbers and can't wait to continue to contribute to this planet of ours and our future children's. We as humans need to look beyond our own needs and think about what life we want our children's families to experience. -
