My big brother helped out with the recipe, on the fly. The results were not that bad. I would add a bit of sugar in the mix, if I’d change something. Or you can use maple syrup or lightly candied fruit on a pan to add at the end (like we did here). It’s also not completely gluten free, because we needed to add something to keep them together. If you want them entirely #glutenfree just make the batter liquid, instead that 1 c and 1/4 of #plantbased milk, go for a 1 c and 1/2 😊
Here it’s the #recipe
1c of buckwheat flour/+ 1/4 c white flour
1 c and 1/4 of plant based milk (I like rice/coconut or almond when making pancakes) with a squeeze of lemon.
2tbsp bean water (aquafaba used here- chickpeas water)
2tbsp of vegan butter, melted
1 tbsp of baking powder
2 tsp of baking soda
Mix first the dry ingredients and the liquid ones separately, once you did that, add the liquid ones to the dry ones and mix them up together, until you have a smooth consistency.
Proceed to warm up the pan and lightly oil it up (we used coconut oil here). Serve warm. It’s a good healthy alternative to the usual pancakes.
