Sorry we haven't posted as regularly as usual, but things have been extremely hectic with school and our training. I hope everyone had a great weekend! As you can see, we did! We love being able to take time and make a delicious and macro friendly breakfast. This is a must try!

Ingredients:
1 cup of flour
1 Tbsp of baking powder
1/4 Tsp of salt
2 Tbsp of maple syrup
1 scoop vanilla Vega protein powder @vega_team
1 cup of water(more as preferenced)
Directions:
1. Add dry ingredients into a mixing bowl and mix thoroughly.
2. Add maple syrup and water and stir until batter forms.
3. Cook in skillet on medium heat.
4. Enjoy with toppings of your choice!

~Lentil Loaf~
This vegan rendition provides the same great taste of a classic meatloaf dish while being a healthier alternative. By using lentils as a base, we pack on plant based protein and vital micronutrients! This dish may take a bit longer to create, but it is definitely worth the time when possible!

Ingredients:
3 1/4 cups of cooked lentils
2 cups of cooked brown rice
1 onion (diced)
2 cloves of garlic (minced)
1/2 Tsp of salt
1/4 cup of ketchup
1/2 Tsp sage
3/4 Tsp Italian seasoning
Directions:
1. Preheat oven to 350F.
2. Sauté onions and garlic for 3-5 min.
3. In a large bowl mash lentils until nearly all of the lentils are mashed.
4. Add sautéd onions and garlic, ketchup, sage, salt, Italian seasoning, and brown rice to the bowl of mashed lentils.
5. Mix thoroughly.
6. Press contents of bowl into a loaf pan and place in oven for one hour.
7. Once cooked, remove from pan and serve with veggies and your choice of sauce!

~NOM Sushi~
I hope everyone had an amazing weekend! We just have to say, we LOVE NOM! It is a local, Japanese-inspired, modern American restaurant. This place has incredible sushi rolls, one of which includes quinoa, tofu, hummus, and cucumber topped with crispy kale. They also serve some unreal vegan miso ramen! As a vegan it can be hard to go out with friends or even go out at all when there aren't a lot of options, but it's important to know where you can go and what will work best for your life! Everyone needs some social time and time to break away from their normal homemade meals. It's important to be able to maintain your fitness goals in the process! Keep grinding, and be the best you that you can be!

We were astonished at the tropical taste of this bowl! Using mango, pineapple, strawberries, peaches, coconut, and of course spinach!

Makes 2 servings:
Ingredients:
2 cups of water
2 cups of spinach
1 bag of frozen dole mixed fruit
1 scoop of Coconut Almond Vega protein powder @vega_team
2 frozen bananas
Toppings:
1 Tsp chia seeds
1/4 cup of chopped almonds
Directions:
1. Put ingredients into blender and blend to desired consistency.
2. Pour contents into serving bowl and add your favorite toppings.

~Tofu Scramble~
Tofu scrambles can be a great introduction to vegan cuisine due to its simplicity and its similarity to scrambled eggs. We love to add spinach, mushrooms, and vegan sausages in order to boost micronutrients, protein content, and taste!

Creates 2 servings:
Ingredients:
400g Extra firm tofu
1/4 Tsp ground turmeric
1/4 Tsp garlic powder
1/4 Tsp salt
1/4 Tsp pepper
2 Tbsp Maple Syrup
1/2 cup spinach
1 cup sliced mushrooms
300g vegan sausage
Directions:
1. Drain and press tofu until little to no moisture exist.
2. Crumble pressed tofu into a mixing bowl and add turmeric, garlic powder, salt, pepper, and maple syrup.
3. Mix thoroughly
4. Transfer tofu mixture to pan and heat over medium heat.
5. Add spinach, mushrooms, and sliced sausages to the pan and cook until desired temperature is reached.
6. Serve, share, enjoy!

Tonight, we created lentil sloppy joes with a side of corn on the cob, broccoli, and sweet potato wedges for another epic high-volume meal! This dish provides a classic smoky sloppy joe taste.

Ingredients:
2 1/2 cups of cooked lentils
1/2 white or yellow onion minced
2 cloves of garlic minced
15oz of tomato sauce
2Tbs of Worcestershire sauce
1 Tsp chili powder (add more for a spiced dish)
1 Tsp ground cumin (add more for a smokier dish)
Pinch of paprika
Salt and pepper to taste(start light)
Directions:
1. Over medium heat sauté onion.
2. Add tomato sauce and stir.
3. Add Worcestershire sauce, garlic, chili powder, cumin, paprika, salt, and pepper.
4. Stir until thoroughly mixed.
5. Add cooked lentils and stir to get sloppy joe consistency.

~Seitan Mongolian "Beef"~
We love to switch it up and add a little Asian flare to our staple dishes! This Mongolian "Beef" recipe implements seitan as it's high protein source! This is a more unique dish and is a great way to break up the monotony of the classic dishes usually made.

Ingredients:
Stir fry:
40g seitan
2 tbsp arrowroot
2 garlic cloves, minced
1/2-1 cup of broccoli
1/2-1 cup of edamame
Sauce:
2-3 tbsp soy sauce
1/4 cup water
1 tsp arrowroot
2 tbsp water
Serve over:
1- 1 1/2 cup of cooked brown rice

Directions:
1. Stir soy sauce and 1/4 cup of water in a small bowl. Also stir arrowroot and 2 tbsp of water in a separate small bowl. Save for later.
2. Cut seitan into thin strips. Place in bowl, and coat strips with arrowroot.
3. In a lightly oiled(we chose olive oil!) pan, cook seitan strips on medium-high heat for five minutes on each side, or until crispy.
4. Lower heat to medium.
5. Add garlic and sauté for flavor for ~2 minutes.
6. Add edamame, broccoli, arrowroot mixture, and soy sauce mixture. Cook ~2 more minutes.
7. Serve over rice and enjoy!

1. Wash sweet potatoes
2. Cut sweet potatoes into wedges
3. Lightly salt and pepper sweet potatoes
4. Bake at 450F for 30min
5. Broil for 2-3min
6. Enjoy with a side of your favorite vegan sauce!

~Date & Walnut Chocolate Chip Cookies~
We know that everyone gets a sweet tooth once in awhile, but don't completely sabotage your fitness goals to satisfy the craving. Instead, create these amazing sweet and delicious cookies made from dates and walnuts! -----------------------------
Ingredients:
12 pitted dates
1 1/2 cup of walnuts
1 Tsp of vanilla extract
1 Tsp Apple cider vinegar
1/2 Tsp baking soda
1/4 Tsp salt
1 flax or chia seed egg (1 tablespoon ground flax or chia seeds with 3 tablespoons of water)
1/2 cup of vegan chocolate chips
Directions:
1. Preheat oven to 350F
2. Add dates and walnuts into a food processor and grind until a nice crumbly texture is created.
3. Add vanilla extract, flax or chia egg, baking soda, salt, and apple cider vinegar to the date and walnut mixture.
4. Continue to grind until a creamier dough like texture is formed.
5. Place dough and chocolate chips into a mixing bowl and stir.
6. Divide dough into desired cookie size portions and place on baking sheet. (Parchment paper may be used)
7. Bake at 350F for 8-12min (when creating approximately 12 cookies)
8. Serve and enjoy!

Ingredients:
56g of black bean pasta
20g of homemade seitan
57g of mushrooms
3/4 cup of pasta sauce
Directions:
1. Cut seitan to desired shape.
2. Bring 2 cups of water to a boil in a small pot.
3. Place black bean noodles into pot. (Be aware that black bean noodles tend to cook faster than regular noodles.)
4. Wash mushrooms
5. Put seitan, mushrooms, and pasta sauce into a skillet and heat at medium heat until desired temperature is reached.
6. Serve and enjoy!

200g cooked black beans
1 corn on the cob

Directions:
1. Cook brown rice and black beans as desired.

3. Slice and peel avocado.
4. Add rice, black beans, avocado, carrots, and corn to a bowl.

1. Spread pizza sauce over flatbread.
2. Add a layer of mozzarella and cheddar shreds.
3. Spread a layer of veggies and seitan.
4. Cook at 450F for 12 minutes.
