❤ RAMEN IN A JAR (VEGAN) ❤
Sticking to a Vegan diet in Dubai is not always easy - as the plant-based restaurant options are quite limited.
So my husband always takes a lunch box from home. This is one of his favorite lunches – Ramen in a Jar.
Once prepared, it is so easy to make in the office. Just add boiling water and rest for 5 minutes. Voila!
Then enjoy the rich umami flavour of the soup, with crispy vegetables and soft juicy noodles. This soup is simply delicious. Especially good at the start of a long week!
The secret to the success of this Ramen is the quality of the miso paste (used as the soup base). Make sure that you buy fresh miso paste from an authentic Japanese supermarket.
I drive across town to get mine - from Deans Fujiya Supermarket in Oud Metha (Dubai).
Worth the effort.
I also left out the fresh ginger in the video which I usually use. Do add that in ... 🙌
INGREDIENTS (1 Jar)
▪️1 cup ramen noodles, cooked
▪️1.5 tbsp miso paste
▪️1 hand full of baby spinach
▪️2 baby radish, slice thinly
▪️¼ pack shimeji mushroom
▪️5 cm carrot, thinly julienned ▪️¼ pack firm tofu, (lightly fried without oil) ▪️½ stalk of spring onion, chopped
▪️1 tsp chili paste
▪️1 tsp mirin rice vinegar
▪️1 tsp roasted sesame oil
▪️3 cm fresh ginger, thinly julienned ▪️1 tsp toasted sesame seeds
▪️1 tsp nori seaweed, cut thinly
Boil the noodles for 5 minutes, then rinse and set aside.
Boil the shimeji mushroom for 3 minutes and set aside.
Place all the ingredients into a jar and seal.
Add to your lunch box.
At lunch-time, add boiling water and stir well.
Put the lid on and let it rest for 5 minutes.
