This is one of the coolest desserts I’ve had - Tarte Tatin Parfait at Claude Bosi at the Bibendum @bibendum_restaurant a few months back. It is a Tarte Tatin,but taken apart, reimagined, and restructured. It looks like an apple but it is not an apple. Very creative and of course absolutely delicious. Note the reflection of a stained glass window on the plate too. It is a stained glass window of the Michelin Man. One of the UK’s highest ranking restaurant of the World’s 50 Best Restaurants list. Had to book at least one month in advance. Very pricey, but really worth the visit at least once in your lifetime. Everything served in front of us from snacks to main to dessert; they all had a Michelin-star quality feel to them. A lot of finesse in every dish with subtle touch of artistry in the presentation and the flavor combination. The game dishes were really the highlight of the evening. Pheasant’s egg and the deer dishes were sublime, eliciting a burst of delicate flavor through the egg yolk and the juiciness of the meat. Ambience and service was warm and welcoming, as expected.. but the place felt a bit cramped though.

Another dessert from the Librije’s Zusje in Amsterdam! Swipe to see the progression!! When we sat down this was our centerpiece, and was “watered” about half way through. The texture was slightly sponge- kind of soft, kind of firm- like ginger you get with sushi. We love dishes that tell a story and develop throughout the meal!

[#Alentejo #Garden] The two Michelin stars chef Hans Neuner, from Ocean restaurant in Algarve, is a real lucky chef! Working with passionate gardeners like Jean-Paul Brigand and Ann Kenny is a blessing. A walk in their magnificent garden, is always an opportunity to find new products to work with. Hans is already a fan of their hibiscus flowers, but when we toured the property he found really interesting the taste of their leaves; they taste like sorrel. He works with a lot of their citrus and with a particular nashi called kosui, a kind of pear that has an amazing floral taste. That day, Hans discovered the red flowers of “baselle” spinach. Flowers that he used the same day on a dish...
