One of the highlights of Ledbury's tasting menu - the aubergine dish.

Aubergine is usually a vegetable which doesn't stand out on its own but the chef did an absolutely incredible job with the punchy flavours to bring out the best of the aubergine. Definitely inspired us to be more creative with our cooking.

Aska is one dark and moody restaurant. The outside doors are the color of soot. I never did locate the restaurant’s name anywhere. Inside, servers dress in matching black outfits and shoes. Want to guess the color of the tablecloths? Coupled with dim ceiling lights, flickering candles at each table portend a forthcoming ominous experience. My overheated imagination briefly entertained the notion that my available dinner reservation was just a façade, a clever trick to get me here alone. I would not be eating a tasting menu that evening. Instead, I would be secretly inducted into a religious cult under threat of bodily harm and perhaps forced to down warm, salty blood as a pledge of eternal fealty to some pagan god…or demon. Sure enough, there indeed was blood—pig blood to be exact. But before we get to that part, let me backtrack a bit…

If @askanyc had been my first Nordic dinner in NYC, it probably would have ruined my enjoyment of two other Scandinavian dinners (i.e., Aquavit and atera). From the first bite of the amuse-bouche, Chef @fredrikberselius already promised a head-turning, smile-inducing, discard-your-notions kind of meal. If you’re intimately familiar with Nordic cuisine, you’re in for a real treat here. If you’re more or less a novice—me, essentially—your culinary experience may turn out even greater 😃

The cuisine here is oftentimes daring, brushing the edge of audacity but never veering into outright absurdity. Your faith in submitting to the restaurant’s lead, course after course, will be richly rewarded. This cooking is no mere illusion, culinary sleight of hand, or even a trick of the light, what little there is in the restaurant. At Aska, the Nordic magic is marvelous and all too real, even if it dabbles in the Dark Arts 🎩

Capped off our Japan food tour by saving the best for last, Sushi Masuda. Eating traditional sushi in Japan was one of things I was most looking forward to during this trip. While I’ve already tasted some really good sushi over here, this was leaps above the rest. By far the best sushi omakase of my life, especially if you’re looking for Edomae style sushi. Chef Masuda was an apprentice at the world famous Sukiyabashi Jiro as seen in the documentary “Jiro Dreams of Sushi.” (Masuda is the guy on the far right of the cover) He broke off on his own in 2014, earning a Michelin star his first year, and two stars in 2017. What makes Masuda’s place different from Jiro’s is that the dining experience is around 90 minutes, versus ~20 minutes at Jiro’s. In addition, the environment is a bit more welcoming for non-Japanese speakers. However, it’s said that when it comes to his vinegar flavored rice, it is Jiro’s influence through and through. That sushi rice was completely different from anything I’ve had before. Even the tamago is done in Jiro’s style and is said to take 90 minutes to make. He really recreates very similar dishes to what you see in Jiro’s documentary but mixes in a few of his own creations throughout the 19 course meal.
Everything was cut, proportioned, and executed perfectly. Could not find any flaws in every piece of sushi placed in front of me. All the ingredients seemed specially chosen and each piece of sushi masterfully crafted. The restaurant is a small bar seating up to 6 people making for an intimate setting.
