Tum mak hoong - green papaya salad with snake bean, padaek, tomato, dry shrimp and peanuts
Green Mangos with sweet, savory, spicy, stanky dip! Seriously good! You could even pour it over any sour fruit and eat it with a spoon!
Recipe below. Cook outside if possible. (Measurements are approximate) • Any sour fruit • 3 Tbsp Palm Sugar • 2 Tbsp Fish Sauce • 1/2 Tbsp Shrimp Paste • 2 Tbsp Toasted Rice Powder • 2 Tbsp Chopped Shallots • 2 cloves Minced Garlic • Chopped Bird-eye Chilis • Dried finely crushed chili flakes
In a saucepan on med-low, melt palm sugar, adding a little bit of water to help it dissolve. Once the sugar is caramelized, add fish sauce and shrimp paste. Stir until well combined. Take off the heat and add the remaining ingredients. Adjust to your liking by adding more fish sauce or sugar or chilis. Enjoy!
