The Eurasian Stew.
This would be a typical soup you'd find in any Eurasian home.
The recipe may differ from one family to another, but this soup is definitely a comforting dish.
In my home this is how I make it.
1 whole medium sized Chicken (cut in pieces & seasoned with salt and pepper)
1 stick cinnamon
1 star anise
4 white peppercorns
2 Red onions (quartered)
2 cloves garlic (smashed)
2 medium carrots (cut 1inch thick)
3 potatoes (quartered)
Half cabbage (roughly chopped/quartered
1 cup French beans (quartered) optional
2-4 cups of water
Salt to taste
In a heavy based pot, add oil and sautee the cinnamon, cloves and star anise, till fragrant. Add onions and garlic.
Add chicken and allow for it to cook for about 5minutes.
Pour about 2 cups of water.
Add carrots n potatoes.
Let it boil.
Reduce heat to medium.
Add salt or 1cube chicken stock.
Add 1tsp cornstarch mixed with water(optional)
If the soup gets too thick add more water.
Cook further till the soup gets a wee bit thicker.
Once everything is cooked, add your French beans and cabbage. Simmer.
Once ready, pour over rice. Have this with sambal belacan and fried salted fish. *(Sambal Belacan is a popular spicy Malaysian chili condiment consisting of chilies, belacan (shrimp paste), and lime juice. It adds zest to all your rice and noodle dishes)
