These simple maple truffles are so soft and chocolatey with a tad bit of coconut sugar coated on the outside HAPPY FRIDAY! .
2 cups of almond meal (homemade, not cold, and not dried)
1/3 cup of maple syrup (room temperature)
2-3 tbsp of cacao powder
1 tbsp of coconut sugar
3 tbsp maca powder
a pinch of salt
1/3 cup of coconut oil or Cacao butter (warm and melted) .
3/4 of a cup of melted cacao butter or coconut oil
2 tbsp of coconut sugar or coconut nectar
2 tbsp of cacao powder .
1) Into a medium sized bowl add all your truffle ingredients and mix/knead with your hands very well.
2) Make truffles (measure with an ice cream scooper) to get the same size truffles.
3) Put the balls into a freezer for 20 minutes then take your chocolate coating ingredients and mix well with a fork or a whisk. Set aside
4) Then take your truffles out of the freezer and roll them into your chocolate mixture sauce and add some coconut sugar on top. (Very fast because it solidifies quickly) Repeat this for all your truffles.
5)Then place the truffles into a closed container and leave them in their fridge and they are ready to eat. Enjoy. Last 3-4 days haha not in my house. 😂
