- Orange Liqueur -
40g Manuka honey
15g Organic orange peel
30g unripe peach
Sous vide & cook for 4h at 55 degrees.
This makes a great replacement for any triple sec calling recipes. The cognac base give it incredible aromatic complexity when the Manuka gives it the most délicate of bitterness.
Peach is only a seasonal addition and I might try and always get an extra flavour on top of the orange peel as I feel there is room.
I guess we'll see :)
