Happy Matcha Avo Monday! Creamy avocado 🥑 and crunchy apples 🍏 on sour dough olive toast, topped with an organic poached egg! Life is good when you have friends who shares organic eggs from happy chickens 🐓 from her backyard! Matcha smoothie made with spinach, snow peas, cucumber, frozen banana, chia seeds, avocado, few mint leaves, matcha and macadamia milk! Who’s looking forward to watching The Golden Globes? Good afternoon loves👋🏼! Several of you were asking for the recipe of my previous post, Oatmeal Almond Cookies, so wanted to share it here! ***Heads-up! These will end up tasting like fancy granola bars, especially if you keep them in the oven for a few minutes longer. For crispy granola like cookies flatten and bake longer, for moist and chewy keep thick and bake as recommended👌🏼 . . Dry ingredients 1 ½ C rolled oats 1 C flour ½ C shredded coconut ½ C sugar 1/3 C crushed almonds 1 Tbsp. flaxseed meal 1 tsp cinnamon 1 tsp baking powder ½ tsp salt . . Wet ingredients 4 Tbsp. coconut oil 3 Tbsp. vegetable or canola oil 2 Tbsp. maple syrup 2 Tbsp. almond milk ½ tsp Champaign vinegar ½ tsp. Vanilla extract . . Mix ingredients separately then combine, use hands to incorporate. Create about 1 – 1.5 inch balls (depending on how large and thick you want your cookies to be, note that the thicker the more moist, thinner will get harder) and place on parchment paper on a baking tray leaving about 2 inches between each ball. Press the ball down gently to form cookie shapes. Pre-heat oven to 350 degrees and bake cookies for no longer than 13-15 minutes. Enjoy!

Celebrating the last day of 2017 with a bit of mixed emotions! This has been a year of so many beautiful food! From smoothies, to smoothie bowls, from eat the rainbow to drink the rainbow, from matcha latte to turmeric, beetroot, and charcoal (I have yet to try this) lattes! From chia puddings to overnight oats, to name just a few!
