Still drooling over these veggie tacos 🌮 I simply seasoned my favorite veggies (cauliflower, purple sweet potato, broccolini, zucchini, squash and red onion) with taco seasoning (comes in a little pouch at any grocery store) and baked them in the oven at 350 for 30 min. As toppings I used fresh guacamole, roasted corn, low-moisture part skim shredded mozzarella, and greek yogurt with dill. For the tortilla I used grain free almond flour tortillas from Whole Foods. Veggie meatballs on brown rice spaghetti topped with spicy arrabbiata with a side of "breaded" eggplant 🍆 parmesan. Recipe for veggie meatballs in previous post. Eggplant recipe to come.

Veggie meatballs before they went in the oven 😍 finely chopped zucchini, squash, portobello mushroom, red onion (in a food processor) + grated sweet potato, and purple sweet potato + chopped parsley + almond meal (can use bread crumbs) + one egg + garlic powder + salt + dried Italian herbs. Bake at 350 for 45 min 🍝

Resistance band day! I love these bands because they are so versatile, affordable, and I can take them anywhere with me even if I'm not near a gym. I got mine off Amazon for about $12 for a set of three.

Post morning workout CHOCOLATE shake: unsweetened almond milk, ice, peanut butter, pea protein powder, banana, strawberry, cocoa powder, raw oats 🍫🥛

The most amazing veggie wrap I've ever made: sautéed sliced eggplant, zucchini, portobello mushroom, and red onion, coupled with fresh alfalfa sprouts, spring greens, tomato, and avocado, wrapped in a wheat tortilla with hummus and Greek yogurt mixed with dill. You can also bake the veggies at 400 for 10-15 min if you want to cut down on the oil.

Today I'm sharing some excises I did with the Vipr, a weighted apparatus made of rubber that promotes "loaded movement training". My Vipr in this video was 6kg which is a little over 13 lbs but they come in all different weights. The video starts off with some "movement preps" which is basically stretching that that I do before any workout to get my heart rate up. Then I move on to Vipr exercises. I like the Vipr because I can do an entire circuit with just one tool. When I don't have access to a Vipr I use medicine balls, plates, troy bars, or barbells but they require a small modification in form. I also do these movements with no weight at all sometimes.

Veggie bowl made from my leftovers this week: grilled cauliflower, sautéed brussel sprouts, red onion, grilled portobello, brown rice, lentils, squash, zucchini, low fat shredded mozzarella, fat free sour cream, tapatillo , green onion, avocado 🥑

Some of these veggies were cut into thick steaks or left whole and grilled 😋 from the top right we have portobello mushrooms seasoned with garlic powder, salt, pepper, low sodium soy sauce and olive oil; Mexican style grilled corn topped with chili powder, paprika, sea salt, garlic powder, Parmesan cheese, and fresh lime juice; cauliflower, broccoli and red onion drizzled with olive oil and seasoned with garlic powder, salt and pepper 👌🏽 grilled for 10 min (except for corn which takes longer) these were so delicious 🙌🏾 in the next photo we have sautéed shaved brussel sprouts, diced yellow squash and zucchini with a side of brown rice mixed with lentils and seasoned with cumin.
