We got back pretty late last night, had a light dinner before sleeping at 4am. Then we were back up at 9am to hit the breakfast buffet! (Obvs😜) Now for a day of exploring the shops (and the hotel gym/pool later!)

#mealprepmonday pre-marinated chicken breast (bought from my local grocer already marinated with "southwest" marinade) baked at 400 degrees on parchment paper for 15 min and broiled on high for 5 min until edges were golden brown + baked brussel sprouts seasoned with garlic powder salt and pepper (400 degrees for 20 min) + @traderjoes brown rice medley

Breakfast with the cutest, sweetest, fluffiest #goldendoodle of them all 🐢 my Nala ❀️ having a big breakfast this morning after a hard workout consisting of high intensity interval training and upper body conditioning. Here, I have two hard boiled eggs, one almond flour grain free tortilla, and a few slices of avocado + one slice of cinnamon raisin Ezekiel toast with two teaspoons of peanut butter and sliced peach + 1/4 cup of old fashioned oats with one tablespoon of peanut butter, banana, berries and cinnamon + nespresso with almond milk vanilla creamer. #goldendoodlesofinstagram

Guilt-free flourless #pancakes. Swipe left to see the main ingredients! All you need is (1) almond meal or almond "flour" which is just finely ground almonds- found in the flour or oatmeal section of your grocery store (2) almond milk (can use water or milk) (3) one egg (4) almond milk yogurt (you can use regular or flavored Greek yogurt) (5) cinnamon (6) stevia (optional) DIRECTIONS: in a bowl mix two cups almond flour with one egg, two heaping table spoons of almond milk yogurt, half cup almond milk, cinnamon, half a packet of stevia. Beat the mixture until it becomes smooth like pancake mix. Make in a pan like a regular pancake and top with honey, peanut butter and berries πŸ˜€

It's been a while since I posted a red meat recipe, but this modified version of a short rib pasta had me like 🀀 if you don't eat red meat you can use turkey sausage OR @fieldroast Italian veggie sausages. I modified the recipe by adding veggies and using zucchini spirals instead of real pasta. INGREDIENTS: 2 tblspn extra virgin olive oil, 3 lbs bone-in beef short rib, 2 medium onions finely chopped, two cups chopped carrots, two cups chopped celery,(add any other chopped veggies you have in your fridge), red wine, zucchini spirals, one jar of your favorite marinara sauce (a chunkier less watery sauce works best for this recipe). DIRECTIONS: Season the short ribs with salt and pepper brown the outside in a hot pan for 10 minutes. Remove beef from the pan. In the same pan, add onions, carrots and celery (and any other veggies), and brown them on medium heat for 12-15 minutes. Add your marinara sauce, a splash of red wine, and bring to a boil. Once at a boil, add the beef, turn the heat on low, cover the pan partially and let the beef cook in the sauce for 4 hours (or until the sauce is thick and the meat is tender). Add salt and garlic powder to taste. Serve on lightly sautéed zucchini spirals. Thank you @dvanta for this delicious recipe 😘
